I use the Babbish chef knife for about a year. I sharpened with my whetstones when it got dull. If you’re wondering the steel type is the same as a Victorinox I’m pretty sure.

​@@ShapesWithoutColors I bought one about a month after they came out and have used it as my daily knife ever since, it took 3ish months before it started to dull and I sharpened it for the first time and that's after using it every single day cooking 3 meals a day for 5 people plus any snacks or small things cooked through the day

@@rickwilliams967To a certain extent yes but the quality of the steel play a bigger role. Perfectly heat treated steel with the perfect carbon content is going to hold an edge way longer than a blade that’s too mild regardless of who’s holding it.

Yup, that and (on the opposite end of the spectrum) how tough it is. Knives with high hardness will be more brittle and increasingly more prone to chips or cracks. They'll take longer to sharpen, but will hold that edge a long time. Super nice to have as a general knife for somewhat more delicate work Toughness is kind-of its opposite, where instead of chipping or breaking off, the edge gets "rolled" because of the softer metal. Tends to be better for any "rough" work like cleavers, chopping meat/bone, or hard fruits like pinapple or watermelon. Balancing the two comes from various forging teqniques (double tempering, powder metallurgy, oil quenching, austenitizing, etc) which is also where the price comes from, but generally the more extreme price-ends lean towards knives with higher HRC.

I think edge retention is bit over hyped. Average person cooking sometimes bit in home doesnt really need that much edge retention since they are not cutting all day long like chef. Obviously you wont get amazing steel for 20, but you might get usable knife. Softer knives are easier to hone, and sharpen so even they have kinda benefits. Thats why people who use their knives insane amounts on hard work actually tend to use cheaper knives butchers for example well they also ran through their knives fast so wouldnt even be economical to have expensive knife.

Not a lawyer, but I don't think its illegal to take money for a review and not call it an advertisement. It'd be common practice to declare it to avoid litigation but that has more to do with claims of IP abuse or defamation. Someone has to take you to court for it to matter.

You can sharpen fork handle to this point. Or just about anything else. Its the blades stress handling, shock resistance and immutability that counts.

Well, i have 500$ knife and still sharpen it every few times. No knife can be sharp after hard use, you just need to maintain it. Even cheapest one can stay sharp if you care for it and hone it every use.

It's generic Chinesium steel; very soft stuff which will need to be sharpened often. You're better off getting a Victorinox

@@UltimateSpanky73 that's of course true, butcher steel for example is very soft, but it's for heavy workloads, average home chefs prefer harder steel, which needs less maintenance... And you are missing the point somehow... The video is not informative, every knife is sharp in the beginning, it's the question whether it stays sharp or if you need to sharpen regularly

I honestly thought this was gonna be a really expensive knife, just for the branding but man am I pleasantly surprised. I always thought that the knife was a bit underwhelming if it had the price I originally assumed, which was around $150-$300

I'm not defending the product, but a cheap product doesn't always mean it's bad quality. This is especially true with knives, if the metal is good and not pot metal. If kept well maintained a $20-$50 knife will perform just as good compared to a $500 knife. Hone them and after 3-4 session sharpen if necessary.

@@Soren9302 so binging with babish is a cooking channel that does everything by scratch there is basic’s with babish which I’ve never actually watched the playlist but I assume it’s the basic’s on cooking. However the main reason why I subscribed to his channel is. He makes foods from video games, tv shows, and movies ( still from scratch by the way ) he will make it almost exactly the way it’s shown then will try and make a better version and if he can’t he will ask the viewers and see if they can make it better I recommend the bubble bass or Peter’s car panini episode peter’s panini is a two parter. Edit: so he is no longer called binging with babish he is now called babish culinary universe

Knife maker here , you can make just about anything that sharp problem is actually keeping that edge on the blade you’ll be resharpening that knife after 3 days of use , stainless steel is pretty soft especially the galvanized structure steel they use in cheap knifes , get high carbon steel products especially for cooking or field dressing game , a dull knife is not only an nuisance but a danger aswell.

sharpness out of the box really shouldn't be a metric for judging knives; you don't throw it away when it's blunt after all!

@@superchroma As a professional cook and a hobby mixologist, a long term test of how well the edge holds and how easy it chips is much better. So I agree. You can sharpen a wood knife to be as effective as the knife in this video if you wanted. It's all about longevity.

Its amazing how many people are duped by this type of advertising... As mentioned by a few others, the steel this knife is made from is garbage and won't keep its edge. Initial sharpness is irrelevant if its a butterknife by day 3. You get exactly what you pay for

Ease of sharpening and the quality of the edge you can achieve is what you sacfrice with shit steel. If you don't see babish using his own knife, it probably says something.

Looked into it, it’s made from 1.4116, which is a solid budget steel. It is a high carbon stainless so it should be pretty corrosion resistant. If it is heat treated right that knife could actually be good value for $20. Also no knife holds an edge forever. The factory edge will wear away eventually so you will need to re-sharpen it to get the edge back.

If you want to keep knifes really good, would recommend investing into whetstones and learning about how to use them. You can make any knife as sharp as that one

@@SketchMeyer stones are not hard to use. But some knives are hard and take more work. Cheap knives, like maybe this Babbish may be soft. Soft knives can be sharpened easily but wear out quickly. Expensive hard knives, you may not want to bother trying.

@@SketchMeyer Grab a sharpie and color the edge of the knife. Take the knife to the stone and look at the edge. If there is sharpie remaining towards the apex, your angle is too shallow. If there is sharpie on the base of the edge, your angle is too steep. Once you get a feel for how the knife should feel when sharpening, maintaining proper angles will become much easier. Sharpening is just maintaining proper angles.

Every single knife comes out the box sharp. What makes a good knife is how long keeps the edge, if it is prone to chip, the weight of it and (depending on the kind of knife) wether it bends or not.

Also gotta consider things like corrosion resistance over time and they quality of the handle fitments and stuff like that. That said, I can't speak for the quality of the knife bc I've never held the thing, but it at least looks like it was pretty well thought out as far as design goes. Nice understated branding, really cool and useful blade geometry, haven't heard any complaints as far and ergonomics go, etc. Would love to see a review of it after some time to see how well it holds up to hard use.

For the sake of all the skeptics, I did a little untrustworthy research (so take it as you will) to figure out how good it is at face value. The knife is advertised to be made from high carbon 1.4116 stainless steel which is ideal for chef knives as I couldn't get an exact measure as to how strong that is, there are good comparations. most articles and forums I found are comparing that alloy to 420HC. Which doing a little more unreliable research shows that 420HC is one of the "cheaper" but still a very reliable alloy that is used in many applications such as machetes, chef knives, balisongs and even swords. TLDR : $20 for a decent all around knife what will require sharpening not horribly often is up to you on how worth. Maybe I'll pick one up and let everyone know in the future.

4116 is a low quality steel. A small improvement over Chinese 7cr series. I’ve used a lot of 4116 & I doubt the company is using revolutionary heat treat methods. Though the price reflects the steel.

@@bruhfunny975 sharpening your knives every time is a waste of money if you use them often the constant sharpening is ruining the longevity of the edge. A proper sharpening and feathering should keep your blade razor like for many many uses. Feathering commonly with a steel hone is ok as it's only correcting the direction of the edge. You're literally shaving away your knives slowly but surely if they're good quality do some practice with different grit stone and your feathering technique you'll be much happier.

@@seanp2035 just do some research man, it also depends what you want. An all purpose chef’s knife, a smaller utility knife and a paring knife is what most kitchens need and bbc good food, gq magazine and even nbc have articles about what knives are good, who recommends them and where to buy them

The longer the knife holds its edge without sharpening, the harder it is to sharpen. So, IMHO this whole how for expensive knives and expensive sharpening tools that require quite a lot of learning and then work... It's too much. You can get similar sharpness with cheap knives that you sharpen with cheap, simple tools. They will get blunt much faster, but sharpening takes 20 seconds and you save hundreds, so who cares.

Most knives are great right out of the box because they haven't been dulled yet. The sign of quality is how well it holds its edge. That knife may be a bargain at $20, but I'm betting anything over $50 blows it out of the water for longevity.

I’ve actually had this knife for a bit now, and I use it consistently. It hasn’t lost much of its edge at all, and I was able to fix up any dullness with an Angle Set Sharpener super quickly. It’s an amazing quality knife.

I have cheap knives I got from Amazon ($10ish each) that all are just as sharp. It's about maintaining the edge more than anything else. Get a honing steel and give it a few passes between uses. Every professional chef or butcher does the same thing and nothing stays sharp if you don't maintain it.

Depends like kiwi knives are only 10 bucks but are seen as disposable knives used for 2-3 months but I used mine for years for 10 bucks the product was amazing and all I had to do like with any other knife was sharpen the edge from time to time

You can sharpen a cheap butterknife to be razor sharp. The real test is how long it holds an edge. This is a common trick used by scammers selling junk knives. I noticed the box did not mention the exact type of steel used... another trick they use.

My executive sous chef got one of these for the kitchen and its been so good. We all want to use it for our prep because it's so nice to handle. It's a great general knife can be used for alot of broad tasks too. Just need to look after it and make sure everyone cleans it and keeps it maintained.

The real question isn't how well does it cut right out of the box. It's actually "what grade of steel is used in its construction?" That'll help determine its edge retention and corrosion resistance. No matter the answer, it can't be as bad as Kamikoto knives, since babish is only selling his for $20.

I judge knifes on material/durability, weight/control, and design/structure. I really don’t judge by sharpness because almost anything can be sharp, it only matter how long it last after some work.

No thats not true at all. New knives vary in terms of sharpness greatly....its like you think that guy never bought a knife before. He was shocked by how sharp it was compared to his other knives. I had the same experience, I have the cleft and santoku babish knives and they are far sharper than any of my other knives and require almost no effort to use. They easily glide through a cooked steak first pass and have kept that edge. They are still far sharper after months of every day use than a brand new knife I was given on Christmas.

@Dima El-Qasem I’ve actually had it for about 2-3 months now and I’ve been using it regularly and the edge still is amazing. Every other week or so I take a couple passes on my knife steel and it is still razor sharp. I use it to cut everything, such as meat, herbs, vegetables, etc.

it's not a very deep field but most people just don't care about knife sharpening, steel types, etc. and get wowed by knives cutting things So sad. Anyway, that dollar store blade won't hold its edge though :)

I’ve never understood why the initial sharpness of a knife is such a huge make-or-break selling point when it’s common knowledge that no blade put to regular use will stay sharp for long, you have to resharpen it yourself. With that said, how sharp it is out of the box will only really effect your first couple uses, then it’ll just be however sharp you can make it yourself
