Greens in Stock Recipe:
Ingredients:
4 cups of your fav stock. We prefer chicken.
Large batch of any greens, like tatsoi, mustard, kale, turnip, or collards. We love to mix our greens as well.
Salt & pepper to taste
Directions:
1. Pour the stock into a large Dutch oven or heavy saucepan and bring to a boil. Add the prepared greens in batches, waiting until the first batch wilts into the stock before adding more. (This will seem like an enormous amount of greens, but they cook down considerably and quickly.)
2. Cook, uncovered, over high heat until the greens are just tender, about 15-20 minutes. Take care not to overcook the greens. During cooking, season as needed with salt and freshly ground black pepper. Greens are served highly seasoned.
3. When they are done, use a slotted spoon or strainer to remove them from the pot, draining off any excess liquid, and serve hot.

I have to brag on Mary Carl for a while...I watch a lot of videos that have their children in them. And you see some who “act up” or just need to be the center of attention, etc, etc. Just being kids. But Mary Carl is so sweet and well mannered. She is grounded and natural. I’m sure this is due to her upbringing. She is beautiful and so smart. I could listen to her talk about her chickens all day. Mary Carl please don’t loose your sweet personality. I think Jason and Mrs. Cog Hill is pretty cool too

When mom would make ham/cabbage/potatoes, the 'pot liquor' was thoroughly enjoyed, and served in the 'Sunday Best' cups and saucers at each place setting, even the children, 'cause we ALL enjoyed it and kinda honored it with the 'good' china on the table. Mom put it in the tall coffee pot of the service, and passed around the table. You're the first time anybody online has ever mentioned it that 'I've' heard. My father was from N.C. : )

Jason, I'd like to make a suggestion for MaryCarl's greenhouse. I remember you saying that you wanted to build some shelves for her plants. The white orchid was so tall, it almost touched to top of the greenhouse. A descending shelf, like a staircase with different widths would probably give her more space for future plants! A little countertop for her to work on would also be good for her. Even if were just outside the greenhouse with a little cabinet under the countertop for her soil and pots! Waterproof of course! She's such a good gardener, I know she's going to want to maximize her space as much as possible! Just a suggestion, knowing anything you do will be with her best interest in mind!!! That greenhouse was such a blessing for y'all, I know Mrs. Cog would love more herbs for cooking! Those orchids are just beautiful! I'm saving for one of those greenhouses for myself! I'm so inspired by your video's, you tell such great stories and show awesome pics of all the babies! Sincerely, Deb
