Hyderabadi Chicken Dum Biryani Recipe ( Enough for 8 to 10 members)
1 Kg Rice Recipe
Ingredients
Long Grain Basmati Rice- 1 kg
Onions for frying- 1/2 kg ( Peeled)
Oil for frying - 300 ml
Ingredients for Chicken Marination
Chicken Biryani Cut - 1 kg
Coriander Powder- 1 tbsp
Cumin Powder- 1 tbsp
Red Chilli Powder - 2 tbsp
Fennel seeds (Sauf) Powder- 1/2 tsp
Cardamom Powder-1/2 tsp
Biryani Masala - 1 tbsp
Turmeric Powder-1 tsp
Ginger Garlic Paste - 4 tbsp
lemon Juice - 3 lemons
Curd / Yoghurt - 200 gm
Fried Onions- 1/2 quantity(earlier fried)
Chopped Coriander - 1/2 Cup
Refined Oil (remaining oil after frying Onions) - 8 tbsp
Chopped Mint Leaves - 4 tbsp
Ingredients to add in to the water for boiling Rice -
Water- 3 liters
Cinnamon - 3 pieces
Black Pepper - 20 to 25 numbers
Shahjeera (Caraway seeds) - 1 tsp
Bay leaves-2
Fennel seeds - 1 tsp
Green Cardamom - 15 numbers
Black Cardamom - 3 numbers
Cloves-15 to 20 numbers
Star Anise-1 number
Salt- 2 1/2 tbsp
Desi ghee- 1 tbsp
Other Ingredients for rice topping-
1/2 gm Saffron soaked in 1/2 Cup hot milk
Kewda Water- 7 to 8 drops
rose Water- 7 to 8 Drops
Desi ghee -2 tbsp
Chopped Coriander
Chopped mint
Water used for Rice Boiling -100 ml
Method
1 Slice onions , deep fry it (golden Brown colour)
2 Marinate chicken using mentioned ingredients for at least 4 hours
3 Wash rice at least for 3 times. Soak it in water for 15 to 20 minutes
4 Meanwhile keep 3 liters of water for boiling . Add above mentioned khada masala & ghee
5 Add rice in this boiling water & cook it for 3 minutes . Drain & spread half quantity on marinated Chicken.
6 Boil remaining rice for 1 more minute , strain it and spread it on top of
earlier layer of rice.
8 Top the rice with the above mentioned Rice topping ingredients
9 seal the vessel using dough & cover with lid. Keep a gap for passing the steam
10 Turn on the heat and place the sealed Handi on top
11 Cook on high heat for 4 minutes
12 Place tawa on top of the burner and place handi on top of the tawa .
lower the heat and cook on very slow heat for 10 minutes
13 Turn off the heat after 10 minutes & keep it covered for another 10 minutes
14 Serve Biryani with accompaniments ( Mirch ka salan & Raita)
