Two things in your recipe should be avoided to enhance the flavor of this dish: 1. When preparing potatoes, you didn't allow enough time for Mustard Seeds to crackle and release their aroma, before adding Cumin, etc. Not enough splattering of Mustard seeds leaves behind slight bitterness. 2. Same happens when you add lemon juice and continue cooking. Always turn the heat off before adding lemon juice. The residual heat in the vegetables is enough to incorporate lemony tanginess, without heat, while still preserving its flavor.
