Today we’re going on a quick Turkish street food tour in Istanbul in the Grand Bazaar - which is considered to be the world’s first covered shopping malls, and one of the oldest covered bazaars in the world. When you are there, you’ll be greeted by over 4,000 and a section for almost everything you can imagine. With around 250,000 to 400,000 visitors and shoppers everyday, there’s bound to be some delicious Turkish street food to try!

Sorry to say that but the first place, Dönerci Şahin Usta, Mark ate at just rips people off. He puts a maximum of 50 grams of döner meat and charges 10 USD! Do not go and eat there!

It's important to tell the street food vendors that you want plenty of kebabs in your bread, some vendors just serve small portions or small amounts of kebabs or kokorec! That's something I have noticed on the streets. As an tip from me to all of you, don't be shy to tell the vendor to add some extra kebab or kokorec into your order, that will make the meal so much more delicious! It is also important to point what piece you want while buying street foods, often the vendor just pick one themselves and serves it to you, if you point on that piece that you really want to eat you will enojy the tastyride so much more. 😚

Guys, if any Kokorech place is chopping the kokorech into tiny pieces, almost converting into minced kokorech, it is considered as non authentic, and as if he is trying to hide that his kokorech is not tender enough, so that you can eat it without chewing, otherwise it would be tough to chew. and if they are adding peppers and tomatoes to the kokorech, they are selling you half kokorech and half veggies. You may think you like it that way, and yes it becomes delicious, but in the authentic form, they should not add any veggies. In authentic form, they are supposed to cut a round about half inch thick and cut that into 6 bite size pieces and only add little spice on it, nothing else. If the kokorech is made from lamb organs with the right pieces or organs, it will be very delicious by itself inside the bread. Everything they do in addition is considered as cheating their customers.

@@oykugursoz4867Aslında dediğiniz gibi Ankara Döneri meşhur İzmir Güzelyalı da da Ankara Dönercisi var eskiden çok iyi yapıyorlardı fakat son zamanlarda bozdular. İyi Döneri aslında bir yöreye bağlamak yanlış çünkü besi Hayvanın dan tut marinesine yapılış tekniğine pişirme yöntemine kadar çeşitlilik gösteren bi yiyecek. Sizin aksine ben İzmir de çok iyi Döner yedim fakat çoğu kişinin tenezzül bile etmeyeceği bir yer ama gel gör ki adamlar efsane döner yapıyorlar. Yapıyorlar derken hayvanı kendileri yetiştiriyor ve kesiyorlar o hayvanı ne ile besliyorlar ve eti ne ile marine ediyorlar bilmiyorum ama o et o kadar lezzetli ki bide eti odun kömürü ateşinde pişiriyorlar var ya lezzetinden adeta yiyenin başını döndürüyor. O et ağzınızla temas ettiğinde hemen farkı anlıyorsunuz zaten 👌

Dediğiniz gibi Kumrusu ve Söğüşü de çok güzel ben eskiden söğüş ağzıma koymazdım ta ki bi arkadaşım beni kemeraltında Cimbomun yerine götürene kadar Hisarönü söğüşçüsü de iyidir.. Eğer bi daha yolunuz düşerse buralara söyleyin bana size birkaç yer önereyim böylece giderken İzmir in tadı damağımızda kalır 🙂

Şahin Usta's döner is the most overrated döner in Istanbul. The meat is made from ground meat, not solid cuts. In Turkey, ground meat döner is considered lower quality. A good döner is made from solid meat. Because of this, it's really dry. And it's super expensive. I just don't get why it's so popular. Aynen Kebap's atmosphere is fantastic. Sitting in the middle of everyone and munching on as much parsley, pickles, and peppers as you want is such a blast. The kokoreç looks amazing too. While you can eat kokoreç during the day, it's a nighttime dish. It's especially popular for ending a night out after drinks. But hey, it's delicious during the day too! :) Thanks Mark, your energy and passion are truly inspiring.

​@@JamesKerwin Döner kebap is all over so i'm not gonna give a specific name but generally he's right. Unless it is Bursa or Ankara style döner which is supposed to be made with ground beef, it is a general rule that it is most likely lower quality. You'll understand the from the look of the meat. Ground beef will always look dry and greyish. Higher quality döner will always be juicy, vibrant color that makes you wanna bite the whole thing and you can almost always tell that it is made with layers pf meat. Traditionally its supposed to be lamb but nowadays most places does it by beef/lamb mix. You should be able to see the fat layer in between the meat. That is why a classic Turkish döner never has sauce unlike the ones in Germany or UK. If you see these on a döner, unless the meat itself hasnt gone bad, there's almost no chance that it is bad.

Değil mi ya? Bursa'ya gelebilirdi. İskender Kebap,pideli köfte, İnegöl köfte olayı var. Abdal'da tahanlıya simit banarak, cevizli lokumlu kahvaltı olayı var. 40 çeşit kuru fasulyeden kestaneli kuru fasulyeyi yemek var. Bülent Şef'in balkan yemekleri yemek var. Ülkü Pastanesi'nden Marshall almadan olmaz. Kestane şekersiz hiç olmaz. Bir de adama hiç doğru düzgün meze yedirmediler. İzmir'e kadar gittiler üstelik. Deniz ürünlerini eksik tanıttılar. Keza Karadeniz'de çeşit çeşit balık yemekleri ve ot yemeklerini tanıtabilirlerdi. Adamı et komasına soktular. Aşağı Adana yukarı kokoreç 🤦‍♀️ Uğur gastronomik rehbermiş bir de. Bence belli lokasyonlar haricinde bir şey bilmiyor. Ben daha iyi gezdiririm Mark'ı.

3:55 i wouldnt recommend this place, it's very for non-original Döner. They obviously make it from chopped meat. Meat slices are used in Original Döner, chopped meat version is easier to prepare but lower the quality.

Why did they always eat the same food? Turkish food is much richer. Each region has its own cuisine. There are also amazing vegetable dishes. They introduced Turkish food to Mark incompletely. Turkish cuisine is not just about kebabs.

In Turkey we typically eat Döner with no sauce. A good quality döner is juicy, and won't need any sauce; it should be all about the meat.

I love Türkiye and Istanbul. The only place I didnt like, is the Grand Bazaar. It would be so beautiful, but by looking for a fraction of a second into a direction, attracts so much hassle (which we didnt experience anywhere else in Türkiye), that takes all the fun away for us. @Mark: more meat from Türkiye :-(. Really dissapointing, that veggie, fish or seafood dishes were not included in your Türkiye food series. I dont eat meat, and I am sure that I am not the only fan of your channels, not to eat meat. So such an oneside view of a great cuisine is really bad for such a professional food blogger like you. You should definitely know better !

You're so right! Even though Mark does a great job, because of this trend people think that Turkey is just a country of kebabs. However Turkey has one of the most veggie/vegan rich cuisine in the world with tons of local, traditional dish options unlike most places where they have to make something for it to be vegg/vegan. They only show a part of street food which is nothing but fast food of the culture. But for example, we have restaurants that are called "esnaf lokantası". They make so many different dishes depending on the season. They make almost home cook dishes. I mean there's a food category in Turkey which is called literally "olive oiled". Hundreds if not thousands of dishes we're talking about and majority of them is veggie and a very good percentage of it is vegan. We, as Turks obviously love meat amd especially lamb because of our nomad and Central Asia culture. But this is also a mediterranean country just as well and we love to use veggie and even fruits just as well.

First place overrated place. Been there years ago. I've waited in the line for almost 40minutes. At the end of all I will never go back again. It's just a regular taste nothing special. And the price for that much of meat,no thanks
