JAGGERY VATTAYAPPAM
Ingredients
1. Rice powder 1 ½ cup
2. Grated coconut 2 cups
3. Reva (semolina) ¼ cup
4. Jaggery (approx.) 1 ½ cup
5. Salt to taste
6. Yeast a little
7. Cardamom powder ½ tsp
8. Cumin 1 tsp
Preparation
1. Cook rava like a porridge adding about 1 ½ cup water stirring well,
set aside to cool
2. Mix the rice powder , cooked rava and yeast with water to a soft dough.
Set aside to ferment (8-10 hrs).
3. Crush the coconut coarsely and keep aside.
4. Mix well the fermented dough with jaggery ,salt, Crushed coconut ,cumin and cardamom powder adding water.
5. Steam well when it again ferments after about 2 hours in two dishes (20-25 minutes).
