Guanciale is not "mostly fat"... it's mostly muscle, made it with the cheek of the pork. Vice versa, pancetta IS mostly fat, made with the pork belly. That's why guanciale is more expensive, it's a better cut of meat. Carbonara requires strings, not cubes.

guanciale doesnt have a lot of meat on,and i personally dont like as its too fatty but i know thats what u should put in the carbonara,im italian so i do know,but i prefer smoked pancetta cubes or string,as long as its not guanciale
