I don't know why this Roman Pasta recipe is not as popular as Carbonara or Cacio e Pepe but I can guarantee you it is as good as a delicious carbonara. Why is this Pasta not as popular as the other Roman pastas?

@@vincenzosplate of already tried a bunch. Tiramisu, original Alfredo (had to try it out of curiosity even if it's a tourist trap dish), lemon pasta dish, carbonara (with guanciale, although, we used eggs we had pasteurized at home since we're in the US), etc. All keepers and will try many more! Thank you for enriching our lives! We also love it when you bring on mothers and grandmothers who grew up in Italy to show their dishes! Can't ever go wrong with having home cooked food from mom or grandma from any country! Also learned a lot about your dried pasta recommendations. Had no idea cause the marketing keeps pushing barilla

Yes Vincenzo!! Italian food is simple. Most is born from peasant cooking and there's no fancy crap or extravigances in most of our food. Most of our soups are water based and they're the mist delicious on earth.

I cooked your authentic carbonara and now my children only ask for this or your tuna pasta recipe 🤣 I will make this next and let you know what we think. The pasta water really does wonderful things to the sauce and I never used it before 😢

Great Video Vincenzo! Nice that you have praised this guy's Amatriciana I think he has actually done it with respect he just needs to learn how to pronounce! Any chance you could do a definitive recipe for Pasta con le Sarde and Mollicata like you have done great research with Pasta alla Norma?

I don't know how traditional is this trick, but as I like things done by myself when I'm cooking (from homemade pasta to home grown tomatoes for the sauce), to get the tomatoes soft and easily piled, I left them in hot water for two minutes. I noticed that this makes also the sauce tastes much sweeter, maybe because with the hot water the tomato releases more sugars

@@vincenzosplate I was introduced to it on KZfaq. First by a channel called Pasta Grammar. I'll see if I can link the videos I saw it in. The ingredients are: Extra Virgin Olive Oil 1 clove of garlic (just to flavor the oil then removed) Cherry tomatoes (halved) Peccorino Romano Fresh Basil I don't have specific amounts...I really think it depends on your preference. Boil your pasta per the package instructions minus 2-3 minutes. Heat the olive oil and garlic. Add the tomatoes once the garlic becomes fragrant. Continue cooking so the tomatoes break down (you can remove the garlic at any point up to here). Add a bit of pasta water and the Romano, toss to combine. Add the pasta. Toss and stir. Add the fresh basil. Toss, plate, add more Romano, and enjoy! It's delicious.

Yes you're correct. Cooking meat on a very high heat quickly dries out and overcooked. It's because meat is made up of proteins. Protein tends to break down whenever its overly heated. Always cook meat on a medium or medium low heat.

@@vincenzosplate well tomato paste gives richer taste to basic tomato sauce but you need to be carefull not to put too much paste cause sauce will become too thick, please react to Adam Raguesa yt channel

I like to add some black pepper to mine. I can't find bucatini in any grocery store near me, so I have to use penne. What other pasta would you recommend for this recipe? Btw, I love your videos and you have inspired me to cook authentic Italian cuisine. Thank you!

Oh yea, black pepper goes very well with this dish! 😋 Anyway, you can use spaghetti, long pasta is much better for this dish!

I'm sorry but where is amatriciana from? Rome or Amatrice? Edit: The town still exists! It's had a lot of reconstruction work, the next time you are in Italy you can visit

it is from Amatrice. Yes they are rebuilding the town but it will take forever. unfortunately the best part of the town is gone. very sad

Well, i watched the video yesterday and thought its a good idea to try it .. because it sounds delicious .. and it is simple. Turns out that i could not get the ingredients here at all. - So back to eating lamb and fish i guess.

@@vincenzosplate Its Iceland - everything imported expensively (Italian food is "speciality/delicacy") - during the pandemic .. means .. such things like Pecorino or the meat is naturally quite rare. Still a pleasure to just watch good and simple food being made. - makes me jealous of what awesome ingredients the south of Europe has to offer compared to here.

I always wanted to try this. But I’m wondering about the wine. I see some original recepies include the wine and some don’t. Maybe it was without wine in the very beginning, but now wine has become an accepted ingredient?

The fact that this pasta recipe is less popular determines why don’t popular videos show the ruined version of this. The curse of overhyped recipes is how popular chiefs change them severely to lower costs, make it seem (only seem - I doubt original Carbonara recipe is much harder to achieve) available for an average house cook and satisfy consumer’s demand. I can expect that this would be extremely painful for Italians and true Italian cuisine enjoyers to review “Spaghetti alla Bolognese” (or how else can they call it in videos) popular videos.

you are absolutely right, taking as an example the carbonara which is perhaps one of the most common Italian dishes in the world, has been twisted and bastardized by the greatest chefs, while the lesser known recipes are respected almost to the letter!

Hi Chef! My friend from Lazio told me once that adding white wine to an Amatriciana is an absolutely no go. What do you think. Is wine optional and linked to personal taste, or is it a must have ingredient?

There is actually the registered recipe from Amatrice, and they use white wine in it. Here's a link (english at the bottom), feel free to do other research www.comune.amatrice.rieti.it/gli-spaghetti-allamatriciana/ Also, I am from Roma and I have to say, not everyone is aware of the wine in it. You can not use it, but still, the original, registered recipe is there. The most important thing is to use the right ingredients. Then one can do their own plate, but there's only one (original) Amatriciana, like there's only one Carbonara etc...

It's very hard to come by guancialle? hopefully spelt right, in japan, and pecorino. Any recommendations on different ingredients?

Panchetta for the guancialle (I don't know if it is the right spelling) and parmesan for pecorino (they don't taste similar btw pecorino has a stronger flavour compared to parmesan) he said that in a previous video

I especially love how he went over the relationship between the dishes and grouped Amatriciana with Cacio e Pepe, Carbonara, and Gricia... I knew about the other 3, but I didn't know Pasta Alla Gricia until his video.

Chef Batali skipped the white wine, which is kind of a must in Amatriciana in my opinion. Still, I am sure his version will be great too. :)

Is it necessary to add olive oil at beginning or at all for this dish? If I slow cook the Guanciale from the beginning, I can use the fat instead of adding olive oil from the beginning.

The problem with me cooking is I'm not a patient person. I always use high heat because I can't wait and it'll end up baaaad 😂 Also! The first guy, Donal Skehan, is really cute. I used to watch his show on Natgeo where he learns how to cook from Italian grandmothers
