This Italian recipe for ossobuco beef is suitable for all types of tough meat. If you have bought tough meat and don't know how to cook it, try this recipe for ossobuco. Ingredients and preparation:
Beef Ossobuco
Salt
Black pepper
180 g pancetta or bacon
2-3 tablespoons flour
1 onion
1 medium carrot
2 stalks celery
3 cloves of garlic
120 ml dry white wine
500 g tomato puree
500-600 ml beef broth or water
Rosemary stalks (or thyme)
Parsley
3 bay leaves
Bring to the boil and simmer on a low heat for about 3 hours
Or cover with foil and bake for 3 hours at 180°C
Until the meat begins to disintegrate into fibers
This is great! The meat melts in your mouth
Serve with mashed potatoes or polenta
