Go patrol The Moon, There are 2 Barrier and 2 unstoppables there. The Barrier is in the Shrine of Oryx, and the unstoppable is in the ogre boss areas from Destiny 1 and where you fight the nightmare of crota.

champions usually spawn in higher content such as nightfalls and legend lost sectors. You can check the modifiers of the content you're doing in the bottom left when you select an activity. It will tell you what champions will be in the content

Any gun that has unstop on it, whether by seasonal artifact or by default in the gun, can stun unstop champions. See Datto’s vid for a better explanation and one with visuals. But essentially, aim down sights with the weapon that is unstop and wait til it glows a quick red and shoot. You will also hear a small audio queue, and see the buff “unstoppable (name of the type of gun)” such as “unstoppable sidearm.” Then the next bullet you fire while aiming down sights that hits the champion will stun it. There is a brief window between stuns, essentially you cannot stun lock any kind of champ in the game. So if the champ becomes unstunned after the 5 or so sec it’s recovering it will take another 5 or so seconds before it can be stunned again. Note that seasonal (now called episodes) mods change per season and the guns that get the unstoppable stunning capabilities change with each season. Equipping the perks for the seasonal unstop guns is in the seasonal artifact and can be unlocked with any of the first 5 level ups you get for it which happens fairly early in any season. Just a a few min gameplay usually gets the first 1 or 2 seasonal artifact unlocks.

At this point it’s kinda on you now idk what else to tell ya, although I think we can all agree that Bungie needs better new player onboarding.
