橙蕃薯炆雞翼:
材料:
急凍雞翼2磅
雞蛋黃蕃薯3個
薑10片
處理:
1. 雞翼用清水解凍,倒清水分。
2. 用粗鹽乸5分鐘,除去雪味、雞腥味,及加入鹹味。
3. 雞翼沖洗乾淨,索乾水分。
4. 蕃薯洗淨,去皮。
5. 薑切片。
6. 蕃薯切細舊。
7. 雞翼1開2,中間位切開,令醃製更入味。
8. 雞翼調味:
a. 胡椒粉少量
b. 鮑魚汁1湯匙
c. 生粉1湯匙
醃10分鐘。
烹調:
1. 放150毫升油落鑊燒熱。
2. 加入薑及蕃薯。
3. 蕃薯炸透後,推向鑊邊,加入雞翼。
4. 炸了大約3分鐘,隔去油分。
5. 加入調味:
a. 生抽1/2湯匙
b. 鮑魚汁1湯匙
c. 冰糖2粒
兜勻。
6. 加入滾水,大概蓋過雞翼蕃薯,就可以了。
7. 冚蓋,大火炆3~5分鐘。
8. 上碟。
Braised chicken wings with sweet potatoes:
Ingredients:
Chicken wings 2 lbs
Sweet.potatoes 3 Nos.
Ginger 10 slices
Preparation:
1. Defrost chicken wings with tap water for 10 minutes. Pour away water.
2. Season chicken wings with cooking salt for 5 minutes, removing unpleasant smells and add some salty taste to chicken wings.
5. Rinse chicken wings thoroughly and squeeze them lightly. Dry with kitchen towel.
6. Rinse and peel.off sweet potatoes.
7. Get ginger sliced thinly.
8. Sweet potatoes, cut into small cubes.
9. Cut chicken into two pieces for easy seasoning.
10. Season chicken wings:
a. pepper little
b. abalone sauce 1 tbsp
c. tapioca starch 1 tbsp
for 10 minutes.
Steps:
1. Put 150ml oil into wok.
2. Put ginger and sweet potatoes then.
3. Push sweet potatoes to edge of wok when they have been fried well. Then put chicken wings into wok.
4. Pour away excess oil after wings have been fried for 3 minutes.
5. Put seasonings:
a. light soya sauce 1/2 tbsp
b. abalone sauce 1 tbsp
c. rock sugar 2 cubes
fry well.
6. Add water to chicken wings and sweet potatoes, just cover up the ingredients is OK.
7. Cover wok with lid, braise for 3~5 minutes at high flame.
8. Serve.
You can try to cook chicken wings in this way. It is nutritional and yummy. 😋😋
