I had pepper jelly for the first time just a few weeks ago. (It was store bought and an orange color, so I'm not sure how the flavor will compare) I've never tried canning, but dh has made his fair share of pickles and pickled peppers. This would be fun for us to make together (though we'll have to try to keep the kids out of the jalapenos)!

Mmmmm- this looks delish. We buy a spicy red pepper jelly for xmas but this looks so good. I bought canning supplies and wanted to make jam this summer but didn't end up doing it. I will try this instead. I don't have a food processor. Could I use a blender instead?

Question: why does it have to be liquid pectin ,can you not use the powder?

A blender should work fine. You just might want to chop the whole Jalapenos and puree it in batches. Lot of people add red or green food coloring to the jelly but I prefer not to. Let me know if you end up making it. :)

why not put the peppers through a juicer then you have pure juice, add the vinegar and cook to reduce. You have about an inch of head space in those jars.
