Cornmeal porridge
3 to 4 cups of cornmeal
1 can coconut milk
Mix together until smooth if too thick add cold water and mix until smooth
In a pot with 2 cups of warm water
1 cinnamon stick
2 cinnamon leaves / bqy leaf
Allow to boil for 5 minutes
Add mixture from earlier
Slowly whisking until fully combined and no lumps.
Keep mixing until smooth every couple of minutes.
This pot will need ur attention
Once its start to boil turn down or before its boiling as it may start popping up,so to avoid burning urself.
After 20 minutes of cooking slowly start adding ur
Ur flavours
I Used 100g blended raw peanuts for protein and fats.
Add this now or oats or whatever ur preference is. Also u don’t need to add any thing but ur flavours as this is the traditional way.
Just cornmeal porridge with
Nutmeg
Mix spice powder
Optional more coconut milk
Cover and cook for another 5 minute but mix together half way through on a low heat
Now add
sugar
Vanilla extract
Condensed milk pinch of salt to taste
Cover for another 5 minute on low
And taste for flavours. If too thick just mix with a little boiling water until ur at the consistency ur looking for.
Optionally u can add a bit of almond essence and butter to help with texture and a little flavour.
Once u had all ur flavours and sweeteners cover and leav for another 3 minutes on a low heat.
