If you are curious about Cajun food and want to give it a try, this is a great way to introduce it to your menu line-up. Terrific and easy Jambalaya - I "gaarontee."
Jambalaya with Rotisserie Chicken
1 tablespoon oil
10 ounces andouille or Kielbasa sausage, sliced into rounds
rotisserie chicken, cut into 1 inch pieces, quantity can vary
1 onion, diced
1 small green bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 (14 ounce) can diced tomatoes
1 - 8 oz pkg Jambalaya mix (Zatarains, Tony Chachere’s) OR 1 ¼ cups
rice
2 ½ cups chicken broth
Salt and pepper, to taste
red pepper flakes, to taste
Cajun seasoning, to taste (If using plain rice, start with 1 TBSP)
In a large pot, fry sausage in oil until it begins to brown. Add onions, celery, and peppers, and cook until onions are translucent. Add garlic and Cajun seasoning to taste. Cook 1 minute. Add tomatoes and cook for 2 - 3 minutes. Add chicken broth and rice/jambalaya mix. Cover and cook for 20-25 minutes or according to package directions. When rice is done, stir in chicken. Adjust seasonings before serving if needed. People have different heat tolerances!
