Sitting here listening to John sing reminds me of my dad and Christmas as a kid. He was a new prof and had 3 kids and no money for xmas records but he would play Creedence for us and tell us it was Christmas music. He hung pine boughs above the door with blinking colored lights. The kids would lay on the floor and watch the lights while the folks and their friends played bridge. As I type this he is lying in a hospital bed alone, lungs torn apart from covid. I may never see him again but this music is just like having him over at the table dealing the next hand.

Made this on a smaller scale the other day for 10, but also added fresh shrimp at the end. Used smoked sausage as well as jalapeño cheddar brats out of the casings. Seasoned chicken with an all purpose Greek season blend, and used a creole season blend for shrimp, then left in fridge for several hours before cooking. Followed vid precisely. Used homemade Turkey stock made the previous day from a bird I brined for two days, and cooked with a Cajun seasoning last month. The only other seasonings added to pot was some thyme, smoked paprika and cayenne. Everyone raved, and I have to say, it was the best jambalaya I have ever eaten. The flavor was outstanding.

It looks good. I’m seasoning a #20 washpot while watching cooking videos. 😁 if your pot is seasoned good that SS Paddle isn’t gonna hurt your seasoning. I use stainless spatulas and spoons in all my cast iron and cook in it every day. If you adjust your air intake on your burner it’ll turn the flame blue. It makes it more efficient and won’t soot up the outside of your pots. I liked the music with the recipe. Nice fit!

I wondered why his flame wasn't adjusted. Figured he did it to get a lower heat. But adjusting the flame and lowering the pot would cut his propane use. Jambalaya looked good though:) Same way I make mine.

Jambalaya is my favorite Cajun/creole dish. I and my family like version a Lot. This version taught me a lot. I’m going to incorporate them next I have a hankering for jambalaya. My family will surely enjoy the update.

I literally said "aw" when some of the jambalaya when over the side of the pot at 10:35, it was quite sad. I've known people from Louisiana in my life up here in Yankeeland, and they all were great cooks and loved to share their love of Cajun food with others. One was a woman where I first worked, she would bring in homemade hushpuppies and shrimp creole and other foods for us once in a while. Then there was a guy who worked on a road crew and was in our town for a few months, he threw a party one Sunday and made lots of cajun favorites. The third was a gal, a very pretty cajun gal, she wasn't the MOST beautiful woman ever, but she was one of the very sexiest woman I've ever known. She had such a great body, wore wonderfully tight jeans, had big dark blue eyes and had a sultry face framed by long dark hair in ringlets. When she would get up on the dance floor, every guy couldn't help but watch her. She was a fantastic cook, owned a bar with a little restaurant out in the woods, and had other talents too, a perfect woman. I had a great time with her until her husband was due to get out of jail (drugs). As they say, all good things must end, and it was time to be moving on anyway.

Garlic AND roux, plus a splash of white vinegar does wonders. But that’s the great thing about jambalaya, everyone has a different way of making it and it usually always leads to copious amounts of beer consumption.

I am 8 minutes into the video, so far this looks to be the closest to Louisiana Jambalya I have seen on youtube. Mad respect for the skills....onions in AFTER the oil has been full of the meat fats....I was like "yup that is the flavor". Ok...back to watching.

Check bayou classic depot, they have a whole assortment of pots of different sizes. I believe the one he’s using is a 7 gallon pot.

I use a 7 gallon pot can feed 60 plus . I think his is a 5 gallon pot. Looked real good too...

While the end product looks amazing and I want to eat it all,,,,, I winced every time you slopped food out of the pot. Losing some sausage broke my heart but seeing half a pound of bacon flop out on the ground brought me to tears. You either need to cut the amount down or get a bigger pot. Bacon and sausage waste is no laughing matter.

I’ve done both. The past few time I used Tony. I season the chicken very well then maybe add a little more after the rice is in and I can taste. I always keep salt handy to adjust.

it can be the same spice. Gumbo just has more juice really.
