That’s not the authentic Peking duck. The authentic Peking duck actually have air blew into them So the flesh and skin are separated when sliced as a outcome. Also the skin looks too wiggly, it’s supposed to be crispy.

I believe he also worked for a Peking cuisine restaurant that serves Peking duck. That was how he learned to make Peking duck. But this ABJ dude doesn't eat much.
