Japanese just love the romance of the process. Anyone skinning this fish in America would have plugged in a 10 @amp DeWalt disc sander (bought from Japan), slapped on a 40 grit disc and sanded the skin and scales off - then spent twice as much time cleaning the kitchen up. I will admit though, they got the American construction worker attitude down pat - one guy works while four others supervise. Japanese placement, prep and presentation of dishes is a thing of beauty. Cool vid.
