Steel is not magnetic. Graphite adds carbon to steel. And glass protects steel from oxygen.

The glass in the crucible serves 2 purposes. Mainly It protects the molten steel from oxygen and it can also pull some impurities from the steel

Looks like he loads up the forge with coal, feeds it air until the fire runs out of fuel, then pulls the crucible out the next day after it cools completely. I'd imagine leaving it in the forge with the bricks left in place to help insulate and trap that heat would provide some amount of annealing to the ingot. As you may have noticed, that ingot is still very hard even at forging temps. Normal carbon steel at those temps would have a dull thud when hit with a hammer and moves easily, but the unworked ingot fresh out of the crucible has a sharp ring to it and almost moves like you're cold forging room temp steel. I've gathered from some sources that crucible steel needs to be worked and drawn out considerably before it becomes malleable enough to act like carbon steel...so allowing it to slowly cool down in the crucible overnight should help to prevent the ingot from growing stress fractures during the initial forging process.
