This guy set up his stall all by himself and he’s the only chef. That’s quite amazing. Usually I see two to three guys setting up and cooking. Give him a lot of credits for his delicious dishes. Hope he does extremely well.

Yes. In Fukuoka (where this is located), the Yatai vendors are licensed by the municipal government. The vendors pay rent for their designated spots and are subject to health inspections. As part of those regulations, the stalls only serve customers at night and required to be assembled and disassembled each day. This regulatory structure function as protections for the small business owners and the local Yatai culture. It prevents large operators from displacing the small businesses.
