This cake should be done by 1 hour 50 minutes max. at 300F. However, always use your skewer or toothpick to check for moisture and return to the oven if necessary.
🔺️Dry Ingredients:
3 cups sifted allpurpose flour
1 1/2 tablespoon baking powder
1 3/4 teaspoons Salt
2 teaspoons cinnamon
1 teaspoon ground cloves
1/2 tsp Ginger powder
2 teaspoons grated nutmeg
1/4 tsp cardamom
1 teaspoon coriander powder (Yes I mean coriander powder😄)
1 tsp ground allspice
🔺️Wet Ingredients:
4 1/4 cups PUREED soaked fruits (raisins, prune, currant, glace cherries, white rum, Jamaican Red label wine was soaked and blended together)
1 1/2 tablespoon vanilla
4 or more tablespoons Browning
Few drops of Almond essence
4 tablespoons Orange juice
2 tablespoons lemon juice
🔺️Other ingredients:
4 sticks unsalted BUTTER (1 lb)
1 cup White granulated sugar
1 1/4 cup Soft brown sugar
8 large eggs (at room temperature)
1/2 teaspoon lime zest
1 teaspoon lemon zest
2 teaspoons finely grated orange zest
Boiling water for the tray
Extra Red Label wine and Jamaican white rum for spritzing the cake while hot out of the oven. Please do not soak the cake with extra rum and wine. It is very moist!
