My name is Cadence Gao (中文:高寒). Some of you might already know me from Bilibili, actually one of my very enthusiastic followers has also been very generously taking and uploading my content from my Bilibili channel to KZfaq every week, so I've decided to take step forward and create my own KZfaq channel!

我覺得高廚關於容錯的意思,還包含"做飯的方法",比如同樣把一塊肉弄熟就不只放入烤箱一種, 做醬時候用熱的液體避免結塊等等的, 很多方式可以達到同樣目地,或是用不同方法不影響最後結果, 那就可以選擇最偷懶省力省時的方法,去達成, 不用辛辛苦苦遵循傳統的做法。

應該說是把一份食譜解剖完剩個骨架後你能用其他的什麼東西去替換拼湊成一份你喜歡的樣子,例如漢堡簡單來說就是麵包夾肉,其他的配料就是“容錯空間”

說一句添加劑的事 其實食品工業是普及糧食的一大推手 如果我們堅持無添加,那有很多地區會吃不上飯

還有就是提倡「有機食物鏈」, 其實都是商家為斂財下的套! 當中標榜有機就「更健康」等概念都是子虛烏有的騙局。 不添加不機因改造…就能減少產量, 提高價格, 實實在在說, 就是拿第三世界的人命換人血饅頭!

为什么汉堡店在煎牛肉饼时都不放迷迭香和少许大蒜? 我自己做汉堡的时候都会放,其他洋葱丝酸黄瓜黄芥末都不会少,我家人就说就是多了迷迭香这个味道比外面的汉堡店美味,至少吊打连锁快餐品牌的级别。

也不是這麼比, 如果單單只有A5和牛 成本高又不一定好吃,沒牛味,你用別的牛肉做+了添加劑 口感能跟A5和牛一樣甚至更好吃 成本更低 為什麼不這麼做?

這個星期一中午,我和朋友突地到了Magpie, 其中一個就點了一個漢堡包餐, 是不錯美味,但是有點咸,漢堡肉餅太熟,薯條變軟了不脆😢 要讚的是另外點了油封鴨腿,很好吃!比其他店好吃多!讚! 下次會再來,試一下熟成牛排😊

和牛脂肪的味道是比普通安格斯要甜和清新很多的,就像草飼牛肉的脂肪成分顏色都和谷飼牛肉不一樣,把不同材質的漢堡肉用脂肪含量來一概而論就有點不全面了。

該怎麼跟你解釋呢? 這樣說吧 你總不能拿 黃鰭鮪魚 打成泥 跟藍鰭黑鮪魚肉 打成泥 相提並論吧 因為單論 肉的味道 就算打成泥 也是天壤之別的 除非你是木舌 但普遍 超過六成的人是木舌 我可以認同 結論就是 你是木舌 吃和牛 吃普通草飼牛 吃鮪魚 吃黑鮪魚 都沒所謂 那何必多花錢呢? @@arthurchang5000

不用和牛脂肪的假和牛漢堡最大的bug在油的味道不一樣。 不知道為什麼,和牛的脂肪跟別的牛的脂肪風味有蠻明顯的分別? 沒了那個油香就算脂肪比例差不多味道還是差很多。

想像一下, 你買和牛清修下來多餘的脂肪會比你買適合做漢堡肉的和牛部位還要便宜, 只要在步驟當中用真正的和牛牛油、其他肉選擇自己喜歡的肉, 「理論上」就能得到所謂接近真實的和牛漢堡肉而且比較便宜(?

檸檬酸鹽對身體沒什麼大問題,但磷酸鹽對腎臟以及肝臟的代謝會很傷,還會剝鈣,還是建議找其他的乳化劑,腎臟很珍貴地

As a pharmacist, I can assure you there is sodium phosphate in about 40% of your medicines as an excipient. They can be in any formulations - parenteral, oral, topical. So it's not that harmful as you would've thought ...

最後面問的漢堡沒有蔬菜和番茄🤣 可以理解為容錯率。但主播的意思也很簡單,你想加番茄和蔬菜都可以,這不就是動動刀子就能解決的東西嗎。主播也說了容錯率,什麼東西是不重要的,漢堡的重點是肉麵包醬,蔬菜番茄也沒有說不重要,但本集的重點在添加劑,你會加蔬菜番茄,但這兩樣東西根本就不會有添加劑啊,而這是部知識觀念影片,還要浪費時間教你切蔬菜洗水果😂,後面的解釋也很對絕,直接用漢堡比喻,你依舊是你不管有沒有帽子圍巾,漢堡憶舊是漢堡,不管有沒有蔬菜番茄,直接表明你覺得漢堡是怎樣的就是怎樣的。 說白了就是你想怎樣就怎樣,不用太在乎別人的想法,反正驗證後的結果是自己的,別人信不信也隨他,也表明自己的立場

There are 'additives' in all kind of your medicines, especially in those tablet formulations. They are used as excipients for stability/ surfactant/ preservation... So I am really excited to see you chef using additives in a scientific approach, as we do. There is only one thing I think I would not be happy about if Im out dining and it turns out the whole food is nothing as it should be. If I order a beef Im expecting something from a cow, not from a plant and all those plant-based protein nonsense. I guess that's the point where people get annoyed when they found out there are too much 'additive' in their food, in my humble opinion.

That's a complete straw man. Nobody is selling plant-based food as meat unless you go to a vegetarian restaurant. Plant based protein is always used as a replacement to meat, not an additive.
