the "but better" series is so fun to watch and is also very helpful for people who want to make those recipes at home but I just love that it tends to end up being "what if fast food was slow?" a lot of the time. It really shows how much of a difference ingredients and time makes when you're making food. definitely one of my very favorite series to watch!

Josh - I love your videos. I'm a retired chef myself. The "secret" ingredient to perfect taco meat: do just what you're doing, but finish with a slurry of the pan juices mixed with masa flour. This adds that subtle flavour and acts as the binding agent to defeat the "crumb" of the meat. Trust me - it's a good thing.

Two thoughts: 1: Hoping he eventually does instructions on how to make a cool ranch shell. 2: When I have a craving for Doritos Locos Tacos at home, but not crap like at Taco Bell, I go with nachos instead, using the Doritos as the chips.

To make a ranch taco shell would be even easier, although you really couldn't make it from scratch. But just use ranch dressing mix. You can get powdered buttermilk, add a little of that into the ranch powder, spray the tortillas with oil, dust the seasoning on them and fry 'em up.

Considering the only difference is the shell, I'd imagine using the same process, but adding ranch seasoning packet to your shell season mixture so you get that ranchy goodness! (Hope this helps

I’ve made this a couple of times (except we used Dorito taco shells) now and it is a massive hit in our house. Even without making the shells (yet) they were amazing. Thank you for creating this masterpiece.

Don't get me wrong his tacos are gonna reign far more supreme, but the ease of being able to get a dorito flavored taco for like $3 in less than 10 minutes is pretty alright compared to the labor for a much better taco.

They look complicated but everything looks that way when you haven't done it before. Break the recipes down into steps: ingredients, cookware, time (prep & cook). First time you try it it'll be hard but you can learn which areas are difficult and why, then make the needed adjustments to make it easier the second time around.

The cook book is amazing. My husband and I have turned it into our meal planning book. We decided that each week we would list 5 random page numbers and make whatever is on those pages. So far we've made the beer battered fish, gnocchi, Graham crackers, and wedge salad. Everything has been amazing. We've been following your KZfaq channel for a long time, and we've never been disappointed 🥰

My copy of the book came yesterday. The wide variety of recipes is great, and there's a lot of photos of both the completed dishes and for steps that might be hard to describe like the stages of caramelizing onions for the french onion soup. It's a really nice book overall.

@@angelinesamuel1821 There are 12 recipes in the "Meat" section, of which 5 appear at a glance to use beef or pork. There's a couple others scattered in the other sections that look like they'd use beef or pork, but way more seem to use chicken, and I'd guess about 2/3 of the book isn't meat based at all. That said, it's hard to tell which recipes might ask for beef broth or similar from looking at the table of contents. Hope this helps a bit.

The cardstock sleeve prevents soggy bottoms from sticking to the paper and helps the shells not get obliterated on their way to away from the taco bell

Actually the reason is because wherever he lives has the worst of all fast food restaurants I have ever seen. Every video he has done fastfood in he has shown the saddest most pathetic version of the items. That being said the items usually aren't game breakingly better at other locations.

@@angelinesamuel1821 not at all, it has some pork and beef recipes, but I'm at work right now and I'll have to go home to recheck my book to confirm what is in it (it's like building blocks and some recipes that put them together, as expected, plenty of good recipes though)

@@angelinesamuel1821 I have it also. A lot of it is also breads, pickling, techniques, things like that. Think of it as all of josh's knowledge and stuff you see in videos compressed into recipes and steps.

I love how he’s not like every other KZfaq chef where he only use a5 wagyu. He actually uses technique and many types of meat

He also uses ingredients that the average person can't find anywhere (unless they wanna get everything online and pay more), and techniques that you probably won't be able to pull off unless you've been cooking for a long time. That's not to say that his food doesn't look incredible, though.

@@colina1330 while i agree, i also have to say that i've made a number of his recipes and you can usually find substitutes for some of the more obscure ingredients, and you can go a little less overboard with the fanciness on some things as well. even when you simplify some of his recipes they're still fantastic!

@@grahamh1067 yeah, I guess that's true. Part of the reason we love him is that he's all about the flex. A lot of the fancier ingredients aren't necessary.

@@Renteks- well to be fair, when people buy things using his Amazon links he gets a commission from the sale, and this is how he makes a living so i can't entirely blame him for wanting to make more money. it would still be nice to have the substitution options as well though!

There's not a single fast food out there that will make it home sweating it up in its little bag without becoming infinitely worse. You should do a cheeky little 'fresh' tasting in the car park to make sure the eventual dunking is thorough and well researched. p.s love ya Wiseboi 😘

I work at a bookstore in San Francisco and last, last week we got your Unapologetic Cookbook in as a new release. I always check out the new cookbooks. Dude, a near perfect cookbook. Nearly every recipe spoke to me, all the sauces, pasta making, flour tortillas, all-of-it. I might even decide to like avocado after seeing your Avocado Toast thing! Anyway, bought the book right there, and, now that I've heard of you, found your channel. SUBSCRIBED!!! Good job, brother. I watch a lot of your content and respect your approach on food. I have a challenge for you!!! You make the item your going to challenge first. Therefore, when your blind taste tester try’s the entree, it’s a real testament of how much better your product is in comparison. (I still believe yours would be better.) However, after cooling and congealing, or what other factors may occur, it kinda evens the playing field. I believe the invert to your approach would be an exciting challenge that I would love to see. I’m curious if you ate the items immediately, before, and while eating with yours, would the outcomes be different.

@@bellagab3 there are a lot of the same recipes in the book as on KZfaq. But there are also new recipes. I would look on Amazon’s reviews. I pre ordered the book and actually paid more than what it’s selling for now

Got my book yesterday and am super excited about it. I'm making the grocery store bread, biscuits, and coffee ice cream today (I have to use up a lot of milk and buttermilk pronto). I'll try to remember to come back in 4ish hours and say how they turned out. Also trying the brown butter basted fried eggs.

@@amy-fk2qx the eggs were very very good. The bread was squishy and mild tasting, not bad, just plain. Will probably make a great grilled cheese though. I accidentally added to much salt to the biscuits, but even then they were still good. I didn't get a chance to make the icecream.

PAPA HAS CREATED THE PROPHECY Fun fact: the Doritos Locos Taco broke record sales in fast food history for the most money made on the release day on what was going to be, at the time, a limited edition item. Obviously they had it stay on the menu after its success. :D
