Ambrosia Crumble Recipe
1 ½ C Sweetened Coconut Shredded
1 C Flour
1 C Sugar
½ C Brown Sugar, packed
1 Stick Unsalted Butter, soften to room temperature
½ Ripe, Large Pineapple, cut into 1 in. chunks or equivalent in canned Pineapple.
3 Large Navel Oranges, peeled and sectioned
3 Ripe Bananas, cut into ½ in. slices
2 TBSP Fresh Lemon Juice
1 Pint of Vanilla Ice Cream
Preheat Oven to 350°F/176°C. Butter a 3 qt baking dish.
In a med. Bowl, combine 1 cup of coconut, the flour, ¾ c of the sugar, and all brown sugar.
Use your hands to pinch the butter into the flour mixture to form coarse crumbs.
In another bowl, toss the pineapple, oranges, and bananas with the remaining ½ c. coconut, ¼ c sugar, and 2 tbsp lemon juice.
Place the fruit in the baking dish and sprinkle the topping evenly over it.
Bake for 45 mins. or until the top is golden brown.
Serve with a scoop of vanilla ice cream and Enjoy!
