In this week's Friday episode, Patrick and Stuart continue a visit with Terry and Ash from ‪@chateaudelalacelle‬ when they discover an old toile de Jouy wallpaper that was hidden in an unopened door in the north wing of the chateau that used to house the original chateau kitchen and scullery. They also take a day off from renovations in order to harvest the white peaches from the chateau gardens and process them for preserves to make their own Peach Bellini Jam. Patrick and Stuart also recently joined Terry and Ash for a visit to Château de Lalande to visit with Stephanie and Philip ‪@TheChateauDiaries‬ .

Former small organic farm girl here- I know EXACTLY what you are going through with the harvest. I was always happy to take off for band/ orchestra camp in August! 😆My mother routinely put up 250-300 quart jars via canning. We had a freezer just for freezing produce, extra holiday meat buys. Often since she taught primary school she did a couple small batches of jam, usually black raspberry and strawberry to give out to staff. We didn’t have AC in MI either when we ran the harvest through the kitchen. She had four big windows and fans going, but it was still 42C/102F in there at least. The first two air conditioned spaces we had were kitchen dining, parents bed room because my father worked in 100-115F in downtown Detroit every summer. Mother washed and froze fruit to make jam for holiday gifts, blanched and froze tomatoes, green beans, peas, potatoes. My all time favorite jam is black raspberry. All this food would generally last until just before spring started. Love your copper pots!

Patrick, this is an easy way to delineate the categories for fruit concoctions for canning: chunky = preserves puree = jam juice = jelly citrus rinds = marmalade Follow this method and you won't need to think twice about what to label your finished products. Anyway it's the taste that counts. I'm a huge fan of Cointreau. Add it to whipped cream for desserts such as cream puffs.

Harvest time is pure madness (in my case, it's pears). If you freeze extra chopped fruit, it can be made into jam & preserves during Winter months, when there are fewer demands on your time and a warm kitchen is welcome. Your recipe sounds divine, Thank you for sharing!

I love making jellies and jams but what do you do with it. I donate to Churches for their bazaars, hostess gifts, neighbours, anyone who shows up at the house, people who gave me plant divisions, the owners of fruit trees especially crabapples, relatives,friends, family, my breakfast club members, my card playing group and I go on to use some make marinades and bbq sauce and vinaigrettes. Alas like you -the problem is jars! It’s too late this year to make your Bellini peach jam but next year…. Love to you both

Imagine getting to a project & start taking off the wallpaper & finding 3, 4 perhaps even 5 layers down, that very wallpaper! It may even make it more easy to date, not only the paper but when the decor was applied or changed! How Exciting of a find!

Hi Patrick and Stuart, Two thumbs up for Fraka, and to those preserves! I could almost smell the aromas. I did preserves in the past, so I know in the end, it costs so much and is time-consuming. We grew up on preserves in the past more than now. The best gift someone could give me is a jar of their own chutney or jam. That Toile discovery is awesome. I hope you recreate it and use it somewhere. I am a little biased because I would change the man and woman to two men. Just saying! LOL. It was great seeing you all at Lalande. I just love how my KZfaq vloggers stay in contact, like one great community. 👍 ❤

Obscure fact I think I saw on America's Test Kitchen: Storing apples frozen before thawing and using them in cooking helps break down cellulose, making reduction faster. Not sure if that's the case for other fruits. Most committed home canners pick up jars at charity shops, estate sales, garage sales etc. The negative aspect is they usually require labor = time to get them sparkling clean and sterile. The toile paper you found is very nice. I prefer hunt scenes to the more feminine picnic and courtship themes. Thanks for making time to put out videos of your escapades. Very entertaining.

You've made my day!! Whichever one of you choose the music, thank you!!! You've brought back memories of my childhood. My sister use to play the 1st piece of music you chose for this vlog - J. S. Bach cello inventions. I remember her slogging through the technique needed to angled her bow just right, hearing her fingers slapping against the A, D and G strings! You brought happy moments listening to her rail against Bach for "inventing" this torturous but beautiful piece of music.

Thank you for noticing that. ❤️ Starting in July, I did start purchasing licenses for some classical music pieces since it seemed more appropriate for chateau music. Unfortunately, there is a company called AdRev that keeps trying to make copyright claims through KZfaq on these classical music pieces in our videos, even though we paid a license to use them.

Thanks! Yes, that is what I do, and so far the claims have been released, but not until holding our videos in escrow for almost 30 days while the dispute is pending. I think there is too much overreach allowed by that company.

How exciting discovering this wallpaper- I can just imagine the gorgeous job you will do re- making it, Stuart ( loved the music as you removed it from the door)! You have so much bounty and can’t make the jams and chutneys fast enough… I can just see you turning one of the outbuildings into a large kitchen and production plant for your jams, chutneys, fruit pies… oh the possibilities are endless!🤪😉

Peaches freeze very well. Lots of produce does and you can use it later or preserve it later. You boys need help during harvest season.

If you like peach pie, you can also make the pie filling and freeze it, then during the winter you will have fresh peach pie!

@@bettychandler341that’s what I do - I have several blackberry pie and peach pie fillings in my freezer - I put them in a bag and freeze them in a pie tin so they are ready with the right shape whenever I make a crust.

It is delicious. We are so lucky. We live in an area where most people have their own trees and veggies. We are giving them to friends and now it is the start of chutney season. ❤😊❤. Huge from Colombe. ❤

Thanks. I think that may be true in some places, but here in the French countryside, most everyone has backyard vegetable gardens and fruit trees with their own produce so they just make their own.

You could cook and freeze the peaches. Then use them in peach tarts, on ice cream and yummy in summer smoothies. Very envious of your fruit harvest. Never cooked peach Bellini jam.

God love you for making your confiture in that heat! We had no AC growing up, and my mom insisted on making cherry jam on the hottest day of summer. Of course, we kids were in charge of pitting them and we HATED it after about 20 minutes!! To this day, I can't even think of canning ANYTHING 😂

What a find! The toile would look so smart in a frame as Rob suggested. It's no mystery as to what you've been up to Patrick, you've been in a jam!!! What a crop, I'm sure people like myself are envious of the crop, but thankful we don't have that huge job to take on! In the end, you are set for the winter and more...lovely! Maybe you need to set up a contract with the glass factory? Trade homemade jam for some jars? I fully understand Frauke's work ethic as I'm known as the energizer bunny in my town as well! People like us are more worn out explaining that we have the energy to do these jobs, than doing the job itself. Go Frauke!!!! Don't get in too big of a jam Patrick!!!! lol Another great video guys!!!

I love the wallpaper discovery! Do you have any guess as to how old it may be before you research it? I think hunt scene prints had a resurgence of popularity here in the states in 1920s. I suspect the clues are in how the riders are dressed. The preserves look delishious! It was good to see y’all over on CD too!

Hello my darling Stuart and Patrick. I’m actually on holiday in Dubrovnik in Croatia at present and I could not wait to get back to our villa to see what you both have been up to. What a fantastic find that sample Toil di Jour paper , Wow wow it’s just amazing and I love Stuart’s idea of preserving it in a frame. I just don’t know how you both fit so much in to your day. I’m salivating here imagining what that Bellini jam tastes like as I love a Bellini cocktails. Your poor hands must be sore prepping all that fruit. Good morning Patrick & Stuart, jam making is an art, why, so much love and dedication goes into the complete process. I bought strawberries recently, we 'cleaned' them, sliced them in half, I looked at them and into the freezer they went. I will make the jam very early one morning, I find that the best time to cook as not many people are in the kitchen. So much work, but so worth it. The paper was a fabulous find!! I am not too keen on toile, yet this pattern is exceptionally interesting with the hunting dogs and them disturbing the geese at the water's edge. That is a pattern I would use, especially in fabric. It is so wonderful when one of a kind items are found during renovation projects. Going back to the jam making, I usually pour brandy or whiskey on top of the fruit before sealing, that helps preserving never thought of adding some to the fruit before bottling. I think some brandy in peaches and pears would be great tasting. So nice when I can learn something new each day. I agree, people do not realise the work of making chutneys and jams, I give to those whom I know would appreciate it, because store bought stuff really has very little flavour. Anything home made is fabulous, flavours must be savoured and enjoyed. This episode was interesting, homely and educational. So, I will see you in the next one. Kind regards, Elize.

A sneaky thing to do is recycle all glass jars if they accept a proper canning lid. In the states we use Mason and Kerr brands where you can buy metal lids, metal rings that screw on, and even jars. Of course nothing was gifted that did not include the proviso that all jars come back home if you want more.

We have saved each useable jar and are already out. With the amount of fruit we harvest, staring with the unexpected wild plums…… We will have to buy jars all spring long at the brocantes. And we will. 😂😂. Hugs

Hi guys. While I was watching you make the jam, I was thinking that you should by a jar manufacturing company. And low and behold, you mentioned buying more jars. I just chuckled. It looks delicious. I get Franca totally. Stripping wallpaper is so satisfying. I like painting that way. Kudos to her for doing it in the heat. Which brings me to the puppies. Who cares about you and sunstroke. We should rob a second hand store of its jars 😂😂😂. Kidding. The jam is wonderful. And not anything a regular store sells. Frankie is a wonder. And indeed……. The dogs are most important. The kitchen with its thick walls and the thick stone floor is a favorite place. They love sleeping there and are all well. Thank you so much. ❤❤❤

My first thought was that brown paper is remeniscent of the paper they used to use to wrap butcher's deliveries in, but then the corner flopped over and my jaw hit the desk. It looks like a wood block print. Very rare. And the fact that the company still exists; I am salivating. I am sure I've seen something similar as certains and cushion covers, but unfortunately I can't remember where, other than a large house in Boulogne. (I was as small. Please forgive. :D). Bless Frauke. When she comes up for air.

Oh I do love that toile! What an amazing find! I hope you can get it reproduced, I've seen other chateau owners get theirs done, but don't know where. Even as a feature wall somewhere it'd be magical! All those peaches! Lucky guys! You did a wonderful job of the jam, it looks delicious! You could make some peach sauce or chutney, both equally moreish, with some of your surplus peaches, and why not just stew and freeze several containers so that you can make peach crumble or shortcake or whatever in the winter? So yummy with lovely hot custard! I'm about to make another batch of Lemon Honey, it disappears rapidly in my house! Big hugs and doggy pats xxx

Suggestion, when I give a jar of canned produce, I tell them if they return the jar with their name on a slip of paper put into the jar that they will be on the list for the next harvest😊

If you bring the fruit to a rolling simmer with half a dozen glass marbles in the pot they fall to the bottom and roll around stopping the Jam from sticking.

Oh my all that cutting up of peaches! When you started cutting them the sink looked so full, but then little by little you emptied it. Isn't that a satisfying feeling? I've never made peach jam, but I make strawberry jam every year. And when I start the amount of fruit looks overwhelming, but then it all gets processed and tastes soooo delicious all through the winter. There is a toile de jouy museum outside of Paris which I've read about, but never visited. I wonder if they would have the pattern of your newly found wallpaper sample in the archives. I look forward to hearing more about the results of your research. And a big shout out to Franka for all that work in 90 degree heat!!!😓🥰

Now, my grandmother, a descendant of Alsatians, is rolling in her grave as the peaches were not peeled first before removing pit or stone. She then would very sneakily make a separate jam from the peelings for the kids. We hated it! Blech! who wants peach fuzz on their toungue!

🤣😂🤣. I know what you mean. I used to, till I found out that the peel looses the fuzz when cooked properly. Can’t taste it when it’s puréed. ❤❤❤. I’d have spent 8 hours with peeling. I feel blessed. Hugs.

That toile is stunning! Hunt scenes are a favorite of mine. What a find! I can’t wait to see what you do with it. You both have SO much to offer. You could have classes on making preserves, gardening, historic preservation/ restoration, the history of copper pans, their makers and the care of the pans….and much more. Sounds like you need to find a wholesale company for jars. You could also sorce old jars from brocantes and buy new lids, because the jars are easy to sanitize. It's so fun to create a little business on the side of what you are already doing. The wallpaper awesome of course! Having some to hang once again in the chateau would be the perfect touch to your decor for any room. Big hugs have a great weekend.

Patrick, Thanks for speaking slower. I completely understand you today. Loved the jam session. Are you considering selling all your jams at a brocant? They also make wonderful gifts. Yes we have 36* here in Florida a good part of the year but thank God for AC. The year we had a bad hurricane and had no electricity for two weeks was hell. Took a lot of cold showers. That wallpaper is beautiful and so fits the chateau. Saw you yesterday on Stephanie’s channel. Your vlogs are getting better and better. Maybe Amazon has inexpensive jam jars. The chutney sounds scrumptious.

My mother years ago would can peaches and she would peal them slice them and add rum for the adults and non rum for the kids she said lol 😂 🥰

It's interesting to note that major elements of this toile are used in varied patterns of wallpaper and fabrics. A Google lens search of a screen shot pulled up a similar toile fabric pattern by P.Kauffman and Schumacher.

Yes, I did find similar variations of this online, but they lacked the detail and were simplified or scenes removed. This is definitely an older and more detailed version of the pattern.
