I love how Julien doesn't feel the need to say that he is cooking gluten free and vegan anymore (or he barely mentions it when needed). This definitely could be due to his audience already knowing his dietary restrictions/choices, but it also shows that vegan and GF dishes are abundant and he is normalizing them without needing to explain/validate that he's cooking GF/vegan dishes. There are endless fun recipes that can be enjoyed by everyone on this channel - for those who are GF/vegan or not!! I LOVE how normalized he makes it!

Fun fact: When Julien was whacking the avocado pit with the knife to remove it- I had flash backs. I did that last year, my blade slid, and I sliced all the way through my hand to the bone. I had to get 24 stitches. Good times

I remember my mom getting diagnosed with Celiac's around 15 yrs ago and it was so difficult and expensive to find anything safe for her to eat; we started finding Bob's Red Mill at Wegmans and thankfully the market snapped gluten-free stuff up and made the demand higher (seriously thank you, fad diets!). It's A LOT easier now than 10+ years ago! Kudos to all the manofacters of dietary ingrediences and food! Earlier today I saw in the news that a big butchery where I live are expanding to make meat subsidues. A butchery!! And a national survey here said 4 out of 10 people are flexitarians in some way. This gives me hope.

I made the dip, SO GOOD! Thank you, Julien! I didn't use vegan cheese because I don't really like it too much when it isn't melty, instead I added a layer of black beans mixed with black bean salsa, it turned out amazing. That cashew sour cream is delicious!

Recipe for homemade vegan sour cream 11:25 Ingredients - 1.5 cups of cashews - 3/4 cup of water - 1 tbsp of lemon juice - 2 tsp of apple cider vinegar - pinch of salt Directions - put all ingredients in a blender and mix
