I never realized how important these freezer meals can be until I recently fell and broke my leg and had to rely on my husband to cook!

I did every single one of these meals. Took me 2 days to complete but I feel accomplished and I just know my kids will enjoy these meals! Thank you!

I’m 30 weeks pregnant. I have made the lasagna twice, I was able to divide it up into 4 8x8 pans and decided to bake one and freeze the rest. My husband loved it! I made the breakfast casserole and froze into individual portions. Now today I’m making the enchiladas . I love your recipes and having freezer full of homemade meals will be a game changer for postpartum.

A pro tip for enchiladas: use corn tortillas and just barely fry them. You still want the tortillas to be flexible for rolling. It prevents soggy tortillas!

Make sure people you give these to know to remove the plastic wrap :) Many years ago when I knew I was going to be having surgery, I cleaned out my freezer, planned and coked enough dinners for 2 weeks, wrapped and labeled them and stacked them in my freezer, so all my husband had to do was pop one in the oven during the 2 weeks of my recovery. While visiting my 91 year old uncle (who lives by himself ) last weekend I decided on the spur of the moment to try to quickly make some freezer meals to leave for him. I have watched several of your videos and made a few things but all the ones I made last weekend were from this video. I was a bit apprehensive since I hadn’t tried any of them and was cooking in someone else’s kitchen. Just wanted you to know that he has really enjoyed everything he’s tried so far and is ecstatic that he doesn’t have to go out to eat every night . Thank you for your hard work and great ideas! As a soon to be single man in his later years, I am always on the lookout for freezer meals. I like cooking, but I don''t love cooking. The enciladas are awesome! The breakfast cassarole is great too! Though I have been having trouble getting hashbrowns from the store. So I subed thick cut french fries laying flat one layer of them on the bottom of the pan with a light covering of cheese (1/2 cup) then add the rest of the fries over that. It is even better! More cheese is always better!

I'm so thankful I found your channel. Since becoming disabled, I have had to rely on my husband to make a lot of meals. These recipes are so simple and easy to put together that I can make them ahead on my "good" days so my husband can pick a meal to cook on my bad days. I would like to know if the bagged meals freeze well if anyone might know. Thanks for sharing these great recipes.

Just as a suggestion when you make a meal that uses multiple tortillas, such as the chicken enchiladas meal, lay the number of flour tortillas that you want out on the counter. Portion the cheese on to each then portion the chicken mixture on to each. Roll each and place them into the baking pan. This way you will end up with an even amount of filling in each enchilada and it will go faster. If in the end you have one that has less you can “borrow” from the others.
