Agreed. Way too much very bland cheese for my taste. I have never seen the point of Mozzarella except as glue. Basically, you can do this with the omelette of your choice. Flip and fold -- with or without a grated cheese topping. The fold will hold -- believe me. I use a lot of tortillas.
