How to make Bamboo Shoot Curry - A Sikkim Delicacy (Vegan - Gluten and Dairy Free)

Bamboo Shoots is a delicacy in the North Eastern Area of India and Asia. This curry is usually made in Sikkim. Maybe because it isnt easily available elsewhere, I really like bamboo shoot curry. It reminds me of my home back in Sikkim.
Serves 4
Ingredients:
Canned Bamboo Shoots - 450g
Potatoes - 2 medium
Onions - 3 medium/ 275g
Tomatoes - 2 medium/ 150g
Green Chillies - 5
Coriander Leaves - 1 Cup
Cumin Seeds - 1/2 tsp
Ginger Paste - 1/2 tbsp
Garlic Paste - 1/2 tbsp
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tbsp
Chilli Powder - 1 tsp
Salt - 2 1/2 tsp
Oil - 1/2 Cup
Water - 1/2 + 1/2 Cup + more if necessary

I used all of your spices with canned bamboo shoots and canned water chestnuts which I had mixed and leftover from a Thai dish. I added green beans, basically instead on the onions and potatoes and of the same providence as the shoots. It ended up surprisingly delicious. I'll definitely make again, probably next time closer to your recipe.

We eat bamboo shoot curry in coorg. It is a delicacy eaten with otti (rice bread). Bamboo shoots grow in the forests of coorg in the western ghats. Recipe is very different tho'

all kinds of bamboo shoot are not used for cooking or making bamboo pickle.. generally we make pickle out of bamboo shoot

Lol, for the Indian/asian palate it is not spicy. But I suppose for the western palate this would be pretty spicy 😊

We usually don't eat bamboo shoots with other vegetables because it taste awkward when cook with others it is cooked alone

Hi Saturn, no I haven't used fresh bamboo shoots. You're absolutely right that it is best to use fresh ones. But, as I've said in the video, fresh bamboo shoots are not available everywhere so I have used tinned ones from the brand Canz. :)

Hi @Chandra Biswakarma, I'm not sure what the yellow bamboo you are refering to is. In Sikkim, we used to make this with white and yellow bamboo shoots. But as far as I understand, the yellow bamboo was basically white bamboo that was boiled with haldi. So if that is what you mean by yellow bamboo then, yes, you can use yellow bamboo also.

Hi Debabrata, are you talking about fresh bamboo shoots or canned bamboo shoots? And can you please elaborate on what is confusing and what you found incomplete? Because the introduction very specifically mentions we used canned bamboo shoots that were rinsed 2 to 3 times to remove the smell. Other than that we have shown everything exactly as we make it at home and it is not bitter. Also, I have made this recipe with fresh bamboo shoots as well and have never come across any bitterness. In the description box, I have mentioned to please share if you have more knowledge. So please share this knowledge of bitterness and how to remove it. KZfaq is a community, please contribute 🙏

Hi @RadhalamaLama, it's perfectly fine for us. I suppose it depends on the onions being used as well. We don't find it to be sweet, but you can always reduce onions when you're making it to suit your taste.
