Kakrol or spiny gourd is a popular seasonal veggie commonly availanle during summers in India. It is basically eaten fried or mixed with other veggies in a curry or dal. This is my take on a chutputah, spicy kakrol curry- where soft and succulent kakrol slices are cooked in a chutputah, thick gravy. Can be had with roti/paratha or any rice dish. Ingredients -
Kakrol - 500 gms
Chopped onion - 2 medium sized onion
Ginger garlic paste - 1/2 tsp
Chopped tomato - 1 medium sized
Chopped green chillies - 1 tsp
Turmeric powder - 1/2 tsp
Kashmiri red chilli powder - 1/2 tsp
Cumin powder - 1/4 th tsp
Coriander powder - 1/4 th tsp
Mustard oil - 3 tbsp
Salt as per taste
Sugar - 1/2 tsp
