Here comes the Malnad special recipe Kalale Palya. Kalale is nothing but bamboo shoot where bamboo get sprouts in mansoon season. These sprouts are collected and outer cover will be removed to get the inner soft part. Later this will be grated or chopped small and to be soaked in water for today's. This process is made to get the sour taste to Kalale. After two days this is well cooked as explained in vide along with some beans. Malnad people will wait for the whole year to enjoy this dish which is only available in mansoon season.
