Kadhu Ka Kheer
Ingredients:-
Sorrakai / Bottle Gourd - 1
Milk - 1 litre
Ghee - 2 tb spn
Mixed Dry Fruits - 1/4 cup
Basmati Rice(soaked) - 1 tb spn
Sago - 1/4 cup
Sugar - 100g
Cardamom powder- pinch
Rose essence- 2 drops (optional)
Kewra - 2 drops (optional)
Method:
Peel and grate the bottle gourd as shown. Squeeze out excess water from bottle gourd using neat and clean cotton cloth.
In a pan add ghee, dry fruits and roast them. Then add grated bottle gourd. And sauté it for 3-4 minutes.
Now add milk , sago , coarse basmati rice paste and cook it while stirring continuously till it boils. Add sugar only when sago turns transparent and cook it for 4-5 minutes. In the last add cardamom powder and switch off the flame.
You can also add rose and kewra essence for additional flavour.
Let it cool and serve it chilled.
Garnish with Sliced pistachios, Almonds, Rose Petals and Silver Vark
