Do you need a side dish for a special occasion? Or just a dish for an everyday dinner side? This tomato pie is as easy as it comes. You can have this together and in the oven in just a matter of minutes then you can sit and enjoy your family and friends. Serve it at a BBQ or with fried chicken. It's delicious with all meals. Ingredients:
1 unbaked pie crust
4-5 tomatoes, sliced
1 tsp salt
10 fresh basil leaves, chopped
1/2 cup chopped green onion
1 clove garlic, minced
1 cup mozzarella cheese, grated
1 cup sharp cheddar cheese, grated
3/4 cup mayonnaise
fresh ground black pepper
Directions:
Heat oven to 375 degrees.
Line a baking sheet with paper towels. Slice tomatoes and lay on paper towels. Sprinkle tomatoes with salt. Set aside for 10-15 minutes. Use clean paper towels to pat excess moisture from the tomatoes.
Poke a few holes in pie crust and par-bake for 10 minutes. After crust is baked, reduce temperature to 350 degrees.
Combine basil, green onion, and garlic in a small bowl. Set aside. In a separate bowl, stir together mayonnaise, black pepper, mozzarella and cheddar cheese.
When crust is baked, layer half of the tomatoes on bottom of pie crust. Sprinkle with basil mixture. Spread half of the cheese mixture on top of basil. Repeat layers, tomatoes, basil mixture, and cheese.
Decrease oven temperature to 350 degrees. Bake pie for 30 minutes, uncovered, until the cheese melts and begins to brown on top. Let rest for 10 minutes, slice and enjoy.
