I was really craving a Tim Hortons sour cream glazed donut and couldn't find any keto versions on KZfaq or Pinterest, so I did some research and started working on a recipe. Finally got it right, they are so light and airy and delicious in a cup of coffee!

Keto Sour Cream Glaze Donuts:
5 Tbs. butter (room temperature)
1/2 cup granular sweetener (I used pyure organic stevia which is a little sweeter than others)
1/2 tsp. vanilla stevia drops
2 eggs (room temperature)
1/2 tsp vanilla extract
1/2 tsp vinegar
1/2 cup almond milk or cashew milk (room temperature) (or any nut free unsweetened milk)
1/2 cup sour cream (room temperature)
60 g coconut flour (approximately 1/2 cup)
29 g unflavored whey protein powder (1 scoop)
1 tsp. baking powder
1/2 tsp baking soda
1/4 tsp xanthan gum
1/2 tsp nutmeg
1/2 Tbs. psyllium husk
Preheat oven to 350 degrees. Mix all the dry ingredients together, whisk well, set aside. Place the vinegar into your milk, once soured, mix in your vanilla, stevia extract, and sour cream into the milk, set aside. Cream the butter and sugar substitute together for 2 minutes with a hand mixer, may need up to 4 minutes with a stand mixer. The mixture should be pale white and fluffy. Add in eggs one at a time beating after each one. Then alternate the dry ingredients with the milk sour cream mixture, ending on dry, beating a little after each edition, making sure to scrape down the bowl frequently. Place in a piping bag or a ziplock bag, cut a large hole in the bag and pipe into lightly greased donuts mold, filling 2/3 of the way up. Should make 12 donuts. Bake 16-19 minutes, turning halfway threw for even baking. Let cool for 5 minutes in the pan then flip out onto a wire rack. While cooling completely make the glaze.
Glaze Recipe:
1 Tbs. almond or cashew milk (room temperature)
4 Tbs. butter melted
45 g lakanto powdered sweetener (1/4 cup + 2 Tbs.)
2 tsp. vanilla
The glaze should sit for awhile to thicken while the donuts cool, if it gets too thick before you dip, whisk and if needed, microwave for a few seconds, careful not to get to hot or it will crystallize. Dip bottom of each donut into the glaze and place glaze side up on wire rack with a pan underneath to catch mess, or just wipe the counter after, not much should drip if it is the right consistency.

4.6 g protein

3.7 g sugar alcohols
Total per donut:
152.6 calories
11.8 g fat
12 g total carbs
2 g fiber
11.7 g sugar alcohols
2 g net carbs
4.6 g protein

Awesome! I hope so! Yeah keto has definitely help me a great deal. I lost it slow because I was testing and eating even though I wasn't hungry but it was fine because I didn't feel like I was on a diet the whole time, it was easy!

My butter seized when I put in my second egg 😕 and I couldn’t bring myself to throw out anything so I’m sure mines did not come out as light and airy as yours but mine came out tasting like coconut cake which I still find delicious! Thank you. Hopefully my next batch will come out perfect.

Ok ok ok stop the music. These were great!!! So I made these as muffins, also used plain yogurt as I had no sour cream. It made twelve muffins, which disappeared in seconds. These were moist, fluffy but firm. My family asked why did I only make one batch🤷🏽‍♀️. Can I give you a list of bake things, for you to make? You are making me so happy. How about a bagel? I never get how to make fat head dough correctly 😩. I tried many times. I’m going to try your bread recipe. Your roll/biscuit was a big hit yesterday and I used it today for my egg sandwich 😋. Love your channel. You have a fan.

So happy to hear everyone loved them! I have a cheese danish video that shows how to make a fat head dough. I may try to figure out a bagel in the future. I'll add it to my long list, lol. Love using the biscuit for sandwiches! Also favorite of mine is sausage gravy over biscuits with eggs, so yummy 😋

@@KetoUpgrade I have to check out the cheese video. I must say that I had to keep the muffins about 5 min longer, not sure if it’s due to the yogurt or as they were muffins. Also they deflated a little when the cooled. Should I increase the leavening? Thanks again

@@fayst.hilaire5656 they probably took longer and deflated because of being in muffins. Its a very delicate batter so with the weight on top probably sunk them. Could try increasing the leavening or make them a little smaller so they aren't so tall and heavy on top.

@@KetoUpgrade hi Alycia - I made these as muffins again, I double the leaven agents. They didn’t fall, maybe just a little. While it was good. It was a little dense. Do you think I should double only one of the leavening agent? They still disappeared 😂

@@fayst.hilaire5656 not sure, never made them as muffins. I've seen people put a ball of tinfoil in the middle of muffin tins sprayed with nonstick then pipe the donut batter around them. That might work better than the muffins. Otherwise maybe just up the baking powder.

I didn't like nutmeg, either, until a got the whole nut for grating. It tastes a magnitude better than pre-grated, surprisingly.

No one ever says if they're using salted or unsalted butter in their recipes 🤔 I keep both on hand but usually have to guess which one to use. You called for 5 tbsp in the batter and 4 tbsp butter in your glaze but didn't say if you were using salted or unsalted? Glad you mentioned room temp though. 👍

These look delicious. How do you think these would hold up to adding in flavorings such as cocoa powder or pumpkin?

Thanks! Pumpkin would work well in place of the sour cream. Adding cocoa powder is more problematic I have found out. You can try taking out some of the coconut flour to add the cocoa powder instead but I'm not sure how it would work.

@@KetoUpgrade I ended up making these as is and sticking to the recipe. They were good the day of, but Oh my, the next day magic happened. They were phenomenal. The had a similar flavor of a powdered donut, so good. Thank you so much for sharing these recipes with us and all your tricks of the trade.

Alicia, I have never had success using Psyllium Husk without it turning my batter purple. Is it necessary? If so, what brand did you use and I will buy it. lol

I buy Yerba Prima or the Now brand Whole psyllium husk and they never turn things purple. I have the Amazon link for the yerba prima in the description box below the video.

Yeah, I live like 40 minutes from the Canadian border, Niagara Falls. We use to go to Canada and sit in Tim Hortons and smoke back when we were teenagers. Then they started opening here not long after. So they've been here like 20 years or so.

I've found no protein that is a 1:1 swap for whey. You can take a look at my newest vanilla cake recipe. I figured out a dairy free version. That could help you figure out the ratio change. I used less beef protein for the whey and upped the coconut flour.

Hi Alicia, I made the donuts but they tasted a bit eggy. Any chance we can use egg whites vs whole eggs? Also, I didn’t whip the butter before adding the sweetener so maybe that contributed to my not so spectacular result. I also used Allulose is that okay or should I have used the sweetener you used? And finally, I think 18 minutes was too long in my oven, the bottoms were brown.

There is a lot to answer here. I'm sure you could use egg whites but got to weigh out the same amount of liquid. If you don't follow my recipe exactly, it probably won't turn out the same. Allulose browns more than other sweeteners so that's why your donuts browned too much.

This isn't really nut free like your # says though, I mean it can be with the right sub for the nut milks but you could give one suggestion by it for those that are new to this diet.

I added (any unsweetened nut free milk) to the description. That was one of my first videos, so I've learned to be more specific. I can't just give one suggestion though because everyone's nut allergies are different, my family member can have macadamia nut milk but others may not some can't have coconut, he can. Tree nut allergy, legumes, just peanut, some are classified as seeds. It's very complicated.

@@KetoUpgrade I know, I totally get it, just thought when you have "#coconut flour #nut free" it might confuse people who don't actually read the description. I don't trust people who think something is nut free. A girl I went to cooking school didn't think Nutmeg was an actual nut because she never saw in in whole form only in powder. She made something for someone who had a nut allergy, and he ended up in the hospital. When I've talked to a few people on this diet, I've seen that some people don't realize you can sub out a nut milk for half and half, flax milk, pea milk, etc. Not all of them are great substitutions for keto but there are ways to get around the nut allergy. Anyway, the video is great though, sorry if I was over stepping :)

There is whey protein powder in this recipe. That was one of my first recipes I made it work and it's super light and fluffy.
