This depression-era cake is very moist, very chocolatey, and incredibly delicious. You can shower the cake with confectioners' sugar or do what I did, and spread it thickly with chocolate buttercream frosting. Ingredients are listed below:
For the cake:
A greased 9x13 baking dish
2 cups|260g all-purpose flour
2/3 cup/65g unsweetened cocoa powder
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
3 large eggs at room temperature
1 2/3cups|335g sugar
1 1/2 teaspoons pure vanilla extract
1 cup|220g real mayonnaise
1 1/3 cups|320ml water
Bake in a preheated 350°F oven until a toothpick inserted in the center of the cake comes out clean -- usually 30-35 minutes.
For the buttercream frosting:
1 cup|226g salted or unsalted butter at room temperature
4 1/2cups|540g confectioners' sugar
3/4 cup|62g unsweetened cocoa powder
2 teaspoons pure vanilla extract
2 or more tablespoons milk, cream, or half-and-half -- enough to achieved desired frosting consistency

Little neighbor girl got an Easy-bake oven for Christmas. We were both 7. We baked a little cake, basically a light bulb as oven heating element, which took a long long time. It tasted good but a hassle to wait for another one to bake. We proceeded to eat all the frosting packets straight up and had a wonderful time. LOL

Yes, growing up in the 70's, licking the beaters was even more anticipated than the cake. And, that was the cake batter with raw eggs in it. What a fabulous recipe. My grandmother was 40 when I was born so I love knowing that my great grandmother born in the late 1800's would have made this cake during that era. Perhaps with her girls helping. 💟

This cake is delicious. I have an old, battered and beaten recipe from the 70's. I did not know this recipe is from the 30's, but that makes sense. Thanks for the video. This cake brings back memories.

My parents were born 1915 and 1920 respectively. When I came along in 1950, my childhood was filled with Depression era recipes and stories. In my family, the Depression seemed to have a much more significant impact on family life than even WWII. Family always had supper at the dinner table, and you ATE what you were served. If you didn't like the menu, then you were free to skip dinner that night, but no one ever considered fixing you an alternative choice.

my parents were born in "03". the mayo was to make a moist cake. we made round cakes and stacked them with icing between each layer. my guess is that we used what we had. parents were depression babies. thank you for this. raz

I made the cake today with my Sunbeam Mixmaster 12 which I just serviced. My family was disgusted when I told them there is mayo in the cake - but everyone liked it after tasting! For my taste the frosting is too sweet or too much, I will do a bit less the next time. Thank you for that marvelous recipe!

Hi Kevin. I remember this cake! I am of Mr. Fox's era. There was an abundance of war ration recipes that my Gram made. Very nice cake. I just found a similar one that uses two cups of plain yogart, but there is butter and sugar. I tried making it with regular baking cocoa and it needed something more, so substituted half for Herseys Special Dark. I can see you using that stout wooden spoon, but I wasn't born with biceps that can compete with a Kitchen Aid! That butter cream frosting looks amazing as well. Thanks for sharing this mayo cake recipe. ~ Diane

Thank you for this recipe, I'm going to try it tonight. I think the original recipe from the 30's didn't have eggs as they were very expensive during the depression.

Hi Susan - This batter can definitely be used for delicious cupcakes. Bake at 350°F until a toothpick inserted in the center of a cupcake comes out clean -- probably 14-16 minutes, depending on your oven. When they've cooled to room temperature, freeze the cakes in air-tight containers.

@kevinleejacobs1364
@kevinleejacobs1364 2 жыл бұрын
Hi Pat - Mayonnaise works here because it is made from oil and egg yolks. Since kefir contains neither oil nor egg yolks, I'm afraid that it would not contribute anything to the cake. And I'm a BIG fan of kefir!

Could you please let me know what type of spoon exactly that you can use or can you just use ANY spoon? I

Before I owned electric beaters of any kind, I used a stout (i.e., "sturdy") wooden spoon to make cake batters and cookie doughs. Conversely, I used a large wire whisk to beat egg whites and to make whipped cream. Remember that prior to 1930, all cookies, cakes, and other baked goods were made entirely by hand!
