So I've been also trying to play this, while the rom does patch and work, when I rename it properly to 'f-zero-hybrid' the soundtrack is still the original, so I'm unsure what I'm doing incorrectly.

Which emulator are you using, and what version? I had a similar issue. Turns out the emulator I was using was 8 years out of date

You usually have to rename the .msu file and each and every .pcm track to match the ROM name-- I.E. from "f-zero_msu_17.pcm" to "f-zero-hybrid_17.pcm".

Wildfire Warth and Whiteout are also quite hard. I think I got a bit lucky in Wild Fire Warth, easily could have taken just as long

How does that machine feel to fly? Its characteristics generally remind me of the Luna Bomber-- high top speed, delicate, quick recharge, heavy handling-- with what seems like a weird acceleration curve (it seems to pick up really slowly off the line, but really perks up north of 270KPH-- it's like a car "climbing onto the cam" and producing noticeably way more power at higher revs). Also, I'm unreasonably happy the first-ever SNES custom machine is named after my favorite bird. ("Calopsita Calipso" = "Calypso Cockatiel" in Portugese.)

It feels very different from any other. Difference in turning radius between Golden Fox and Luna Bomber already is pretty high. But the difference between Luna Bomber and Calopsita Calipso is even higher. So it is not just a bit heavier, but extremely heavier. It kinda feels more realistic. After I played with it for a while and went back to the other ships after that they felt odd, very light and toy like. It breaks the balancing of the game a bit as the AI speed is balanced around the normal ships. It does well on fast tracks, but slower tracks like Fire Field are a lot harder with this ship as you will lose a lot of time in the tight turns. The weird acceleration curve also partially is due to how weirdly the game displays speed. Numbers get inflated at higher speeds. If you had a constant acceleration from 0 to 478 kph, you would not see your displayed speed go up linearly but crawl at the start and rise faster and faster the higher your speed is.
