𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:
For Rabri -
Milk(दूध) - 1 Liter
Sugar(चीनी) - 1/4 Cup
Milk Powder(दूध का पाउडर) - 1/4 Cup
For Sugar Syrup-
Sugar(चीनी) - 2 Cup
Water(पानी) - 2 Cup
Saffron(केसर) - Some
Cardamom(इलायची) - 3 - 4
For Ghevar-
All-Purpose Flour(मैदा) - 1 Bowl
Gram Flour(बेसन) - 1 Tbsp
Ghee(घी) - 1 Tbsp
Milk(दूध) - 1/4 Cup
Ice Cubes(बर्फ के टुकड़े) - 6-7
Lemon Juice(नींबू का रस) - 1 Tbsp
Oil(तेल)- For Frying
𝐑𝐄𝐂𝐈𝐏𝐄:
𝐅𝐨𝐫 𝐑𝐚𝐛𝐫𝐢, keep the pan for heating & put Milk for boiling. When the Milk starts boiling then put some Sugar, Milk Powder & cook it till it turns thick. Then keep it cooling down & keep it in the fridge.
𝐅𝐨𝐫 𝐒𝐮𝐠𝐚𝐫 𝐒𝐲𝐫𝐮𝐩, keep the pan on the flame, put Sugar & Water. When the Sugar gets melt then put some Cardamom & Saffron & make sticky Sugar Syrup.
𝐅𝐨𝐫 𝐆𝐡𝐞𝐯𝐚𝐫, firstly take a mixing jar & put Ice Cubes, Ghee & churn it. Then gradually put some Milk & churn it again. Then put All-Purpose Flour/Maida in it gradually & churn it again & again by adding Chilled Water in it. Then put Gram Flour & churn it again. Then put some Lemon juice, churn for once & make a loose batter. Take it out into a bowl. Keep a vessel on the flame, put Refined Oil/Ghee for heating & put the batter in it gradually as shown in the video. Keep the fried Ghevar on a strainer, put Sugar Syrup & Rabri on the Ghevar then garnish it with chopped Pistachios, Saffron & Silver Leaf. In this way, without any mold, Halwai Style Ghevar will get ready.
