Hi Aaron great video. If u had to pick between this knife or the masakage yuki gyuto for doing a lot of prep, which would u prefer?

jason ziegler hi Jason. For a lot of prep is say the hap40. It'll hold it's edge a lot longer.

are you really left handed or is the video mirrored? I am left handed and in the market for a new gyuto. wanted to know if there are any steering issues with this knife.

Thanks for the great video, I almost got this knife after a ton of research but cktg were out so I opted for the kohetsu aogami super, have you tried that knife, and if so, what would you say are the + and - between the two. Love your vids man, just wish image was a little better, if not a better camera then maybe work on lighting lol sry otherwise great vids keep em coming

Hey Evan. Hmm the hap40 will hold its edge longer and might be a little thinner than the AS but in reality only the steel and slight extra hardness is only diff in reality.

Thanks Aaron, that was my thoughts as well, the AS is a 64 on the Rockwell vs Hap40 which is 65. Both hard as hell so pretty comparable I'm sure, although as may be a little more reactive so might need a little extra care after use. Thanks again

Do you still recommend this knife as one of the best? Amazing how fast you cut and not just fast but thin and perfect. I wouldn't learn that in a million years, I would just chop my fingers off lol. great vid thanks

Hey Aaron, really appreciate your reviews. I would like to know what the steel it is that you feel outdoes HAP40 for edge retention. Also couldn't quite make out who the knife maker is, was it Rodrigue

Hi Nikki. Well not to many comes to mind. M4 and zdp 189 are about it. The beta knife I own was done by Pierre yes

Hey Aaron I'm reaching out to you again this time regarding your advice on which knife you would choose. The Kohetsu in hap40 or a konosuke in Swedish stainless price not being an issue.

Joe Miller hmmm. Well the kono will out cut the hap40 as it's thinner and such. Hap is medium weight. Kono will also cut better as again thinner grind. Hap will out last in terms of retention and will take a slightly better edge. Hope this helps

Hi Aaron, Thanks for the great video, i am doing research to find out which of the "KS" style profile knives is best. Between the Kohetsu HAP40 and the Konosuke GS+ Togatta, what are the differences, which is better?

Basically the biggest difference is the steel used. Hap40 will easily outlast the GS which will take a edge faster as not as hard

Hi! It's a solid medium-thick knife. It isn't as tall and is a few mm thicker than the Haru.

Cory Cothorn hmm well the hap is little thicker so you can thin it and add some covex but both are flat ground so you will have some but as always the tradeoff with a thin blade
