Hey, would you recommed the 270mm Sujihiki of the same line? I am concerned that it might be a little too flexible due to the thinness of the blade.. I know most sujihikis have a little more give to them. Would you say that the gyuto is sturdy, given that it is a laser? 😅

Eddie Y it’s a good nice. A shiabata would be a great choice but a little out of your price range. A Yoshimi is a good choice at the top end of your price. A harukaze is also another solid pick and is 160$ ish. Hope this helps!

Hey man, hope all's good with you. I had a quick question about knives I was wondering you might be able to help me with. I'm looking for a decent medium weight (~200 grams) gyuto, preferably with a convex grind cus my current knife (a laser I got from a small vendor from Tokyo) tends to get stuck in things like carrots, and has pretty poor food release. I've been looking at knives like the masakage koishi, wakui, and kochi (and also the toyama but I've heard its a beast of a knife and I don't want anything too monstrous) but I can't make my mind up. Any suggestions?
