Hey, would you recommed the 270mm Sujihiki of the same line? I am concerned that it might be a little too flexible due to the thinness of the blade.. I know most sujihikis have a little more give to them. Would you say that the gyuto is sturdy, given that it is a laser? 😅

I know this is an old post but how did you like this when its compared to shibata kotetsu you mentioned briefly. I'm debating between this and shibata and was wondering if the cost difference is justified.

Is this worth the 220 dollars as a first laser? I got around a 300 dollar budget. Is this my best bet or would u suggest anything else. U are a jedi with the blade and highly respect your opinion!

Eddie Y it’s a good nice. A shiabata would be a great choice but a little out of your price range. A Yoshimi is a good choice at the top end of your price. A harukaze is also another solid pick and is 160$ ish. Hope this helps!

I've heard tons of good things about Makoto Kurosaki. I wanted his white #2 version but they've been sold out forever. After seeing you use it in the video I'm sure I won't be disappointed in it. Hey man, hope all's good with you. I had a quick question about knives I was wondering you might be able to help me with. I'm looking for a decent medium weight (~200 grams) gyuto, preferably with a convex grind cus my current knife (a laser I got from a small vendor from Tokyo) tends to get stuck in things like carrots, and has pretty poor food release. I've been looking at knives like the masakage koishi, wakui, and kochi (and also the toyama but I've heard its a beast of a knife and I don't want anything too monstrous) but I can't make my mind up. Any suggestions?

Hey brother. So the Kohetsu HAP40 Gyuto is good middle weight. The shiabata r2 is damn nice. The makoto 240 but hope those help. Not sure on the weights though.

sag BrokenDreamz sure. The only thing to do is put it in a padded clap and slowly try to bed it back. But do so only if you feel comfortable as it can break so proceed with caution.
