This unique cake is made with sweet potato!
I recommend using oriental sweet potato because the flavor is different than the sweet potato in the US.
I tried it the next day and it was even more yummy! So try to keep it for the next day if you can!
* Ingredients
Sheet Cake
- Eggs 225g ( about 4 large eggs )
- Sugar 110g
- Honey 20g
- Vanilla Extract 1g
- Cake Flour 110g
- Milk 30g
- Butter 30g
Sweet Potato Filling
- Oriental Sweet Potato 300g ( about 3ea )
- Sugar 20g
- Butter 25g
- Milk 120g
- Whipped Cream 150g
Whipped cream (for filling and for the outside)
- Heavy Cream 375g
- Sugar 35g
Simple Syrup
- Water 100g
- Sugar 50g
*Method
Sheet Cake
1. Combine egg, sugar, honey, and vanilla in a bowl.
2. Place the bowl on top of a bowl of boiling water and mix until it reaches about 40c or 100f.
3. Whip the mixture on high speed until light, fluffy and ribbony.
4. Mix the mixture on low speed to break any large bubbles.
5. Shift in the flour and mix well.
6. Microwave butter and milk, add some of the batter to it, and mix.
7. Add the mixture back into the batter and fold it in until mixed well.
8. Pour the batter onto a baking sheet or cake pans that have been lined with parchment.
9. Spread out the batter, wack it to level it and kill any big bubbles, then bake at 170c or 325f for 10-15 minutes.
10. Cool it on a cooling rack.
Sweet Potato Filling
1. Roast sweet potatoes at 170c or 325f until fork tender.
2. Peal the potatoes. Then add sugar and butter.
3. Mash the potatoes well and mix milk in.
4. Sieve the mixture.
5. Whip the heavy cream and sugar until stiff peaks.
6. Add 150g of whipped cream to the potato mixture and save the rest of the whipped cream for the outside.
Assemble
1. Microwave syrup ingredients to make simple syrup.
2. Using ring mold or any other mold, cut the cake.
3. Make crumbs using extra cake.
4. Brush syrup on a round of cake, add sweet potato cream and repeat.
5. Put the last layer on top and put the whipped cream outside.
6. Smooth the lines of cream and decorate with crumbs.
