COOKER WALE DUM ALOO
Preparation time 10 minutes
Cooking time 20-25 minutes
Serve 2
Ingredients
For Paste
2 medium size Onion, cut into half, प्याज
2 inch Ginger, slice, अदरक
2 Green chilli, cut into half, हरी मिर्च
1 tbsp Oil, तेल
few Coriander leaves, धनिया पत्ता
For Gravy
2 tbsp Ghee, घी
1 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
½ tsp Fennel seeds, सौंफ
Prepared Paste, तैयार किया हुआ पेस्ट
½ kg Baby potatoes, बेबी आलू
2 tbsp Coriander powder, धनिया पाउडर
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
Little water, पानी
1 cup fresh Tomato puree, ताज़े टमाटर की प्यूरी
Salt to taste, नमक स्वादअनुसार
1 tbsp Coriander leaves, chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
Tomato, wedges, टमाटर
Process
For Paste
In a bowl, add onion, ginger, green chilli, oil and coriander leaves.
Transfer it into a grinder jar and grind it into a smooth paste.
Keep it aside for further use.
For Gravy
In a cooker, add ghee, oil once it's hot, add cumin seeds, fennel seeds and let it splutter well.
Add prepared paste and saute until the raw smell goes away and the paste thickens slightly.
Add baby potatoes and saute it well.
Add Coriander powder, turmeric powder, degi red chilli powder and saute it well.
Add a little water and saute until the masala become thick.
Add tomato puree, salt to taste and mix it well on medium flame.
Cover it with a lid and cook until the potatoes are cooked well.
Add coriander leaves and mix it well.
Garnish it with coriander sprig and serve hot.

My love for cooking started when I was just a little kid around 10 years. Speaking of childhood memories, I would wait for mom to leave the house and climb on the kitchen counter to "cook" dishes like poha, rava thaleepeeth. God alone knows what the results would be but I would happily eat it and clean up before she returned! Later in life I realized that she knew about it all along. Lol

@@manjushalandge5587 Rava dhodak for 6 people: Hf kg rava, 2 cups grated coconut, 2 cucumber 🥒🥒 grated, green🌶️chillies as required, (kothimbir and chopper onions optional), sugar and salt to taste. Method: To grated coconut add chillies, 2 tsp.sugar and salt. Add very little water and crush with hand ✋. Add rava as required (the amount it soaks up, shd be thaalipeet consistency). Rest batter for 20 mins to let the rava soak up all the ingredients. Heat tawa smearing ghee and start to smear the batter on the tawa. Keep flame on medium to high heat. Enjoy with white butter

Love your videos and recipes! I am a Chef by profession. The 1st thing I learnt to make at home was 'Rasam'. Its my fav till now. I have similar story of making rasam for a crowd. Once we had several relatives coming to our house from my mama's house. For some reason my dad and me reached early and we hadn't been home for sometime so we didn't have much to cook with. Just had a few tomatoes and dhaniya in the fridge. I thought everybody is coming for dinner, so let me make something simple so it would be helpful for my mom. So, for the 1st time, I made Rasam and Rice for the whole crowd. My mom was an awesome cook and she would always make it in a big barthan. So I managed to make Rasam in it and all my uncles, aunts and my mom were surprised that I had cookedI Since I was such a 'Tom boy' going for sports practices and events, never I have I ever stepped inside the kitchen. My mom was a perfectionist too so I was always scared to cook in front of her. I tell everybody, even before I knew how to boil water, I wanted to be a Chef! That dream came true after I came to US of A! Still, Rasam remains my 'go-to' comfort food! Thanks for the video. It really brought my childhood memory back.

When I was kid I used to make deep fried potatoes without salt and paratha for my mom on Tuesday. She kept fast Sometimes it used to be raw sometimes overcooked but my mum always ate it with a proud feeling that her 10 yr daughter made that for her..

I started cooking when I was 7, and the first dish I made was Sunfeast Pasta (the orange flavour) all by myself. Everything was readymade back then now I'm 18 and I make the whole thing including pasta at home ♥️ now I watch your videos... Love it a lot

If I talk about my first time cooking , "maine just khichdi ko oil , tamatar or pyaaz me tadka laga ke kha liya tha"😂 kyoki raat ka time tha or fridge me khichdi ke alawa kuch pada nahi tha " don't know if that would be considered as a dish. But sir your channel is the only thing that keeps alive a chef in me even today . Lots of respect to you 🙏❤️

How do you do this??? You always touch my heart by giving lots of childhood memories. You talk about real life scenarios of a common person who face simple struggles in the kitchen everyday. It feels so connected and feels like we all are same as one nation even though you are big chef. Feels like you are one of us. Not only your recipes connect with us but you as a person connect with us. That’s why you are so different than others. That side lips wali smile of yours, those raised eyebrows and that charm in your eyes.. I am so flattered while you talk and I just skip the recipe because I was so busy watching you and your expressions; so I have to go back and check the recipe again. How do you do this!!! मैंने कढ़ाई में चावल बनाना सीखा था बचपन में न्यूजपेपर पढ़ पढ़ के और फैमिली उस टाइम कुकर में बनाते थे पर जब मेरे कढ़ाई वाले चावल खाए तो सब बहुत खुश हुए और आज हमारे घर में कढ़ाई वाले चावल ही बनते है 😊😊

I had been cooking dum allu as authentic Kashmiri dum allu from past 4 decades of my life & had never thought of venturing out to try some other version of it. But as Ranveer said,” Taking risks only make you good chef”, I think I am going to try this recipe soon. All your recipes are awesome & I have tried so many of those. None failed to impress me n my family. So much so that now any different n awesome recipe is taken for granted to be Ranveer’s by all☺️. "DUM"-DAAR recipe !! 👌👌 Took me back to my childhood when I used to cook rice & dal in our cooker - it was a Prestige cooker 😀 ... and a tip for those impatient ones who don't wait for the full seeti... just pour half a glass of water on the cooker.. the pressure will subside.. 😉

Dum aloo is one of my favourite dish since childhood. I always peel the aloo (not being lazy😅🦥).This pressure cooker dum aloo is super easy and delicious. even I am making it since my college days. I am the person who is very impatient with the cooker. I never let the cooker to cooldown on its own. Same with cooker lid closing.and the tomato rose I religiously learned it in 1989 from one of the cook book. Teenage memories. Thank you chef for the lovely recipe.

Wow....😍😍😍 I can totally relate to this video even I had the same enthusiasm when I made my first complete South Indian brinjal curry which I learned just by watching my mom(secretly) and the best part was ,my dad appreciating the recipe. My favourite childhood dish was BREAD UPMA .....meri mammi hamesha banaya karti thi....pre school(baalwadi) me hume roj breads milti thi, aur wo mai ghar laya karti thi....mammi kya upma banati thi usse....so yummy....aajkal to waisi bread hi kahi nahi milti..... Bhaiyaa main to bas aapki baaten sunne ke liye hi videos dekhta hoon. Recipes and aapko khana banaate hue dekhna are just bonus. Great video, relatable story; all the kids have similar stories. Mammi logon ka puraane bartao se attachment, kids ko khana nahi banane dena, all these are universal.

In our family too.... The essential spice used to be jeera powder.... But now I also use more of dhania than jeera. In fact I believe in Bengali households, jeera is the main spice.. whereas in Punjabi cuisine, dhania is the main spice.

Love your use of shuddh north Indian household terminology, "alu godna", "cooker te bol gaya" etc. Feels like I'm listening to my mom. Me and my husband try to maintain the same original rustic form of hindi amongst ourselves thousands of miles away from India.
