Hi sir nice cooking

Har sabzi may onion, garlic, ginger garlic paste, tomatoes. . . . Overbearing tastes make every vegetable taste the same. We make a tadka of oil, rai, heeng, slit green chillies. Then add turmeric powder and a pinch of Kashmiri red chilly powder for colour. Add potatoes and kundru. Add salt to taste and stir fry on medium flame for 2 minutes. Cover the kadhai with a thali which has a rim. Add some water in the thali. Let the vegetables cook on low- medium flame. The steam from the water in the thali will cook the vegetables faster and will prevent burning. Meanwhile, in a mixer-grinder, grind to a dardara mix - ginger, green chillies, fresh coriander leaves, dhaniya-jeera powder, amchur powder, red chilly powder, one tsp of dessicated dry coconut (optional) and a fistful of gathiya/ paapadi or Haldiram's mixture or any mixed farsan. When the vegetables are 80% cooked, add this mix to the vegetables, mix well and cook, stir fry without covering the kadhai/pan, until done. Squeeze the juice of half a lemon or 1-2 tsp as per taste. Generally farsan mixtures contain some sugar. If yours doesn't, you may add a tsp of sugar while grinding the mix. Put off gas. Add a good quantity of chopped fresh coriander leaves, mix well and serve. Kabhi hamari recipe bhi try kar ke dekhiye. 😊
