Does anyone know the recipe to this batter? It is hard to believe its just flour and sugar. Also what is the powder that they put on top of the burning coal, the colour doesn't suggest it is ash.

I think it's previously burned ash. It would act as an insulator to regulate the amount of heat.
So, what's up with the tri-folded pancake? Why? It just seems, at the end, to mean that you get a pancake that is still filled with uncooked batter in the center.

I suppose half cooked triangular pancakes are an acquired taste. Personally, I do not like raw batter or dough of any kind.
