G'day everyone and welcome back to the channel.
How to make scones, Scones from scratch, Pumpkin scones.
Fall in America gets me think of Pumpkins and being an Aussie with an American Girlfriend there is the constant debate about biscuits and scones so that gives me little choice for today's recipe which is a true Aussie Classic.
Lady Flo's Pumpkin scones.
Ingredients
1Tbs Butter
1/2 Cup of sugar
1/4 tsp Salt
1 Egg
1 Cup mashed Pumpkin (cold)
2 - 2 1/2 Cups of Self raising flour (depends on the moisture in the dough)
Directions
Cream the Butter, Sugar and Salt
Add the Egg and Pumpkin beat until incorporated, now at this stage I add 1/2 Cup of the flour and just mix lightly to help get the wet ingredients combined.
Add the remaining flour of the 2 Cups and stir with a knife
Turn out and bring it together as a dough adding more flour if necessary. Most important at this point is DO NOT OVERWORK THE DOUGH. You do not want to develop gluten as you would for a bread as this will retard rising.
press out 1/2 - 3/4" (12-18)mm thick and cut out in circle shapes.
Place on a Baking paper lined (or Buttered and Floured if going Old School) baking tray with even spacing.
Bake in a Very Hot Oven 230C (450f) on the top shelf for 15-20 minutes.
Serve Hot with jam and whipped cream.
