Lovely work!! I took my very first overpiping class this weekend and have even more respect for your work than I did before (which is saying A LOT). Although my effort wasn't horrible for a first try - lol - I couldn't help giggling at how asymmetrical it was -- ie, each section looking slightly different from the other. It really made me appreciate the value and beauty of consistency and symmetry. There really isn't much room to hide with overpiping - lol. Anyway, I had a great teacher and learned SO much!! If I can improve at this technique, I think my overall piping ability will be dramatically better. Thank you for the ongoing inspiration!

I doubt I'll ever "out pipe" your overpipes (haha), but I do aspire to be the best version of me!! I know Ceri Griffiths is teaching soon (or maybe he already has?) at Chef Nicholas Lodge's school in Atlanta, if you're interested. It may be too basic for you, but it says it's not a beginner's class - which is one reason I didn't sign up (lol). I don't think he's going into full-on Lambeth, just sticking to overpiping. I just ordered his book and am so excited to try some more.

Wow! Congratulations to you. You have natural talent. I’m thinking of taking a cake decorating course and I’m truly amazed at what you have achieved on your own. Well, done. You sure deserve your ribbons. Since you accidentally deleted your footage, may I suggest that you perhaps make shorter clips of the creation of your decorations as a series of short (or not) tutorials? Thank you Sonia! I hope to one day travel to a professional decorating class to learn correct techniques. I do take many small clips. It was 3 or 4 in the morning, I thought I had moved them all to my computer before deleting them off my phone. I was SOOO sad. Guess I better not erase ANY footage until I have all the video's compiled. I appreciate your suggestions :)

Just had to watch this again you know how much I love your piping and this is just sleeping to the max. One question on the very top tier kind of goes out all the way to the very edge of the board and kind of like a little Hill it's hard to explain but how did you make that happen? So glad you watched it over, there is a LOT to see on this cake LOL! I think I know what you are asking about. I start with a barrel, thin on the ends and thick in the middle, then I build on that to create the hill effect. Nicely executed! How many layers do you go up on scroll building before you say that's it, no more? It looked like you stopped at 5 on this one, but do you ever push the limits?

This is such an extravagant masterpiece! I've already decided I want to make it for my wedding one day! I have a dilemma though. If it takes over 100 hours to decorate, would this mean you can only decorate it as a foam cake? I would really love to do a real one but when I looked around the general advice is that you should make a cake 2 to 3 days before it's due to be eaten. Is there any way around this?🤔

If you keep it in the refrigerator, it should last a week. LONG hours, returning it to the fridge while you work on other tiers.

very beautiful and congratulations. if you go back to 4;13 in the video it looks like there is a dead fly on the cake I took a double look it's not. but thought it was funny so I had to share

Hi, What type of icing do you normally use for your scroll work? Also what consistency of icing?

Hello! I use Royal Icing Consistency varies depending on the design. Strings are Medium thick, scrolls are thick, dots are medium thin. Here is my Favorite Recipe: kzfaq.info/get/bejne/g52fprinzM-aiYk.html

Hi I have a question that I can't seem to find an answer on anywhere. How do you plan out the process of making a client's wedding cake or any cake for that matter. For instance I'm always in a rush 2 days before the event to finish my cakes and I'm looking for a better now organized way do you (or anyone else on here) have any tips and tricks as to how you plan out your week before like when do you bake your layers how early do you make your dried decorations things like this. Thanks in advance to any answers or tips.

If I have a cake due on the weekend, I will usually Bake the cake on Tues/wed, make the fillings and icings on wed/Thursday, as well as fill and ice the cakes. Thrusday or Friday I will decorate, depending when the cake is due. You can make buttercream a week in advance if that helps save time. I hope that helps!
