INGREDIENTS
●350g (2¾ cups) plain flour
●330g (1⅔ cups) sugar caster or granulated
●1 tbsp baking powder
●½ tbsp bicarbonate of soda
●200g softened butter
●4 medium eggs
●120ml (½ cup) milk room temperature
●1 tsp vanilla extract
TOPPING
●250g (1 cup) smooth jam of your choice
(I used raspberry jam)
●100 g (1 cup) desiccated coconut
METHOD
Place butter and eggs in a large bowl, whisk together till combined (make sure your butter is softened, especially if you're not using a stand or hand mixer
Add your eggs and whisk to combine
Add vanilla essence and the dry ingredients
switch to a spoon to combine ingredients
Add milk and mix well until smooth
Bake at 170°C for 35 - 40 minutes, or until skewer inserted inside comes out clean (much better indicator)
scrape the 'skin'(outer layer)and slice off the sides of your sponge once cooled,this helps with the absorption of the jam
Poke holes all over the sponge,pipe and spread jam all over the sponge,ontop and all over the edges
Stick/sprinkle your coconut all over the cake it will stick perfectly with the jam layer on
**Unless your butter is smooth, you're better off using an electric mixer, but if you have hand 💪🏽💪🏻then go right ahead and mix by hand:)
