You can make a quick cheaty Tortilla Española using potato chips or old french fries, and it's great. (like this: www.seriouseats.com/2013/06/i...)
Or you can add Funnyuns to the mix and it's not. Don't add the Funnyuns.

The coronavirus has hit many folks hard, including first responders and hospital workers, individuals and families who were already food insecure, and service industry employees who are, for the large part, currently out of a job.

@TheMdwills3521 Huh, that’s super interesting to me because I’ve honestly never considered richness in the context of a small appetite before! Just to throw another perspective into the pot: As someone with an above-average appetite, I’ve never been satisfied with dialing back the richness of dishes that I want to be rich (in order to comfortably eat bigger portions of it). I’ve found that I much prefer to let rich things be rich (full-rich!) and only indulge in small portions of those things, and then simply eat other, good-but-not-rich foods alongside them to balance out the meal (both in terms of pleasure and nutrition), as well as honestly just to increase the food bulk for satiation. Issues of convenience aside, I do not consider this a sacrifice, as I genuinely find that (at least for me) having contrast within a meal really helps make its differing components shine. And while I do think I have a pretty open-minded palate, I strongly believe that everyone can (should??) love this style of eating, too. I guess I just wrote a whole lot about my personal eating habits and I’m not sure that anyone will care enough to read all of this. That’s fine. Hahaha.

There's a great video from Chef John where he goes through the entire process of how to make these cauliflower fries. It's like 10 minutes long and he explains from the beginning that they're not good and that they're a waste of time, but he wanted to show you the process and how it's ok to not be perfect in the kitchen. "Never let the food win"

I've done this multiple times with leftover French fries. Great way to use those soggy fries. Just fry them up a bit before to get them crispy again.

Made this today, sans-funions (though I was strongly tempted to experiment with crispy fried onions, I resisted. This time!), and it's way better than I expected it to be! Made mine with onions, mushrooms, and a sprinkling of cheddar. Yum! Thanks for the inspiration and for the continuous fun home cooking ideas.

I've seen one of his sponges with the corner cut. In my house hold this means the sponge has been demoted to cleaners and chemicals. if the sponge has been cut in half it's been demoted to toilet work.

Kenji, I have a question about dicing onions. Most, if not all, demonstrations show vertical cuts on an onion half first, then the horizontal cuts. Is there a reason for that sequence? I find it easier, more precise, and safer to make the horizontal cuts, then the vertical cuts longitudinally to the root end before rotating the onion 90 degrees for the final slicing. Am I missing something?

As someone who has spent a lot of time practicing and perfecting the execution of this dish, I have to admit I was hating on this. I did however love the brutal honesty at the end. You turned it all around with, "This is not particularly good" 😂Fun to see one of your failures while experimenting. I think you may have something here but it would turn out better if you let the chips marinate in the egg for a while and leave out the Funyuns; or maybe just maybe a sparing amount of French's fried onions. Onions don't really bring much to the party IMO for a Spanish tortilla-potatoes and good olive oil being the stars of the dish-but as we all know this is highly debatable. Thanks for the fun video.
