Can this be done with words that have and even number of letters? It seems the effect would be lost on the last letter, as there isn't anything to define the shape on the other side if the letter. Can you demo solutions for this?

You can use it any way you want. In words, check out the Visible by Verizon logo. You can pick out letters within words and go from there. To ensure success, just follow the rules at the start of the video.

what if its "D" in the middle a closed letter. the middle part will be a drag to recolor

The D is defined on the right side. With that in mind, as long as the following letter is defined on the right side, no problem. Think, C, E, F, G and more. Won't work with a left-defined letter like a J, but not too many of those. To recolor the middle of the D, just click on that area with the Shapebuilder tool. It'll become its own shape.
