If you know Jacques Pépin, you know that he is a big fan of conserving food. This video for his famous fridge leftovers salad is the perfect example of how he is able to use even the most bedraggled vegetable from the recesses of his refrigerator through trimming, soaking, peeling and other methods. This episode is more inspiration than a step-by-step recipe, use it to bring new life to old veggies in your own kitchen.
What you'll need:
Leftover produce from your fridge! Jacques uses: bread, green onion, zucchini, radishes, mushroom (of course), onion, tomato, cilantro, olive oil, red wine vinegar

Has Chef Pépin ever done a video on how to clean leeks when you want to cut them into complete circles/rounds? I only know how to clean them by cutting them straight down the middle & separating the leaves. Thanks.

Same here.I even throw in a few "AND HERE WE ARE" and "That's perfectly fine". Chef J.P. has taught me to relax in my kitchen and occasionally enjoy a glass of wine while cooking. I love him so❤❤❤

Other chefs: "For this recipe, you MUST use heirloom tomatoes, olive oil from a remote village in Italy that was hand pressed this morning, and A5 Wagyu encrusted with gold flakes, with a first edition holographic Charizard for a napkin." Chef Pepin: "Alright, lets make a 5 star meal out of some leftovers and a mushroom I found in the fridge. If you don't have mushrooms, that's fine". That's the difference between a sea of fake chefs and a true master; they teach you what to cook, Chef Jacques teaches you HOW to cook.

I've been watching and learning from chef Pepin for 30 years or more. Back in the days when there were actually cooking shows on TV instead of the silly game shows disguised as cooking shows they produce now, you could learn so much from pros like chef Pepin. He's truly a treasure in the world of cooking and I appreciate he still is willing to impart his knowledge. Happy cooking chef.

Such high respect for food from him! He isn't one of those egomaniac chefs who will throw out a perfectly good plate of food in a tantrum because it isn't "perfect" or up to standards. One can say grace over any meal - indeed over every meal. He took a bunch of wilted vegetables, made the wilt go away and crafted a very nice dish. This is mastery! 👏👏❤❤

I do exactly the same thing. My Parents grew up during the Depression so they taught us kids, that throwing out food was a sin. When making a salad, I usually add other stuff I always have on hand like beets, carrots, peppers, chopped almonds, cheese, & any cooked proteins I have as leftovers, & whatever aging fruit I have in the fridge, eg: oranges or peaches. I've never tried the bread trick. I usually make French Toast with stale bread. Thanks for the tip, Chef Pépin. I always thought I was crazy for peeling the outer layer of fresh mushrooms. It's nice to see that Chef Pépin does the same thing. This video showcases the reason I love Chef Pépin & think he is the world's best chef. He makes glorious meals out of just about anything. And the fact he mentions substitutes for items that he has on hand but we may not, is just fantastic. Thanks for all your cooking tips, Chef Pépin. I really appreciate them especially because I could barely boil water before watching your TV shows.

We did not have much money growing up and my Mother was 100% Italian. And just like any ethic cook, Like Jacques Pépin, sometimes you just open the refrigerator and whip something up. It's usually a new classic. Merci.

Reminds me a bit of Fattoush, which is a Lebanese bread salad with greens, radishes, tomatoes, cucumbers and so on. In this case Jacques uses baguette instead of pita bread.

Other chefs will tell you to discard things like stems. Meanwhile, Jacques will transform them into a soup or sauce every time.

I would ALWAYS chose to eat any leftover cooking that was prepared by Mr. Pèpin than a meal from a Michelin restaurant.

Unfortunately, many of those human beings going hungry or starving are in this position by man-made effects and that are driven by irrational belief systems. However, there always seem to be chefs nearby to do what is necessary for humanity within their own might.
