Resep Risol Bihun (16 pcs)
Bahan kulit:
200 gr tepung terigu protein sedang
3 sdm maizena
600 ml air
2 butir telur
2 sdt kaldu ayam bubuk
2 sdm minyak
2 batang daun bawang hijau, cincang
Bahan isian:
190 gr bihun jagung kering, rendam air
3 siung bawang putih
3 siung bawang merah
250 gr wortel
2 batang seledri
3 sdm minyak
¼ sdt merica
½ sdm garam
½ sdm kaldu jamur / penyedap
1 sdm gula pasir
Bahan sambal kacang:
2 siung bawang putih
8 buah cabai keriting merah
3 buah cabai rawit merah
3 sdm selai kacang
1 sdm gula merah
3 buah jeruk limau
½ sdm kecap manis
150 ml air
Pelengkap:
Cabai rawit hijau
Langkah:
1. Cincang bawang merah, bawang putih, seledri, dan parut wortel
2. Panaskan minyak, tumis bawang putih dan bawang merah hingga wangi kemudian masukkan merica, seledri dan wortel, tumis sesaat
3. Masukkan bihun, garam, kaldu jamur dan gula pasir, aduk rata lalu gunting-gunting bihun
4. Pindahkan ke dalam mangkuk, biarkan dingin
5. Di dalam mangkuk, campurkan tepung terigu, maizena, kaldu ayam bubuk, telur, air, minyak dan daun bawang bagian hijau, aduk hingga rata
6. Panaskan wajan, masukkan sedikit adonan kulit sambil di ratakan, masak beberapa saat. Ulangi hingga adonan habis
7. Didihkan air, rebus cabai keriting merah, cabai rawit merah dan bawang putih hingga empuk lalu masukkan ke dalam blender beserta air, selai kacang, gula merah dan garam, haluskan
8. Pindahkan ke dalam mangkuk lalu tambahkan perasan jeruk limau dan kecap manis, aduk rata
9. Siapkan kulit, masukkan isian lalu lipat dan gulung
10. Panaskan minyak, goreng risol hingga kecokelatan, tiriskan

Vermicelli Rissole Recipe (yield 16 pcs)
Skin ingredients:
200 g all-purpose flour
3 tbsp cornstarch
600 ml water
2 pc egg
2 tsp chicken powder
2 tbsp oil
2 pc green onions, chopped
Filling ingredients:
190 g dry corn vermicelli, soaked in water
3 clove garlic
3 pc shallot
250 g carrot
2 pc celery
3 tbsp oil
¼ tsp pepper
½ tbsp salt
½ tbsp mushroom powder / MSG
1 tbsp sugar
Peanut Sambal ingredients:
2 clove garlic
8 pc curly red chili
3 pc red Thai chili
3 tbsp peanut butter
1 tbsp palm sugar
3 pc kaffir lime
½ tbsp sweet soy sauce
150 ml water
Condiment:
Green Thai chili
Steps:
1. Chop the shallots, garlic, and celery. Grate the carrot.
2. Heat the oil. Sautè the garlic and shallots until fragrant, then add pepper, celery, and carrot. Cook for a moment.
3. Add vermicelli, salt, mushroom powder, and sugar. Mix well, then cut the vermicelli.
4. Transfer to a bowl and let cool.
5. In a bowl, combine flour, cornstarch, chicken powder, eggs, water, oil, and the green part of green onions. Mix well.
6. Heat the pan. Add a little bit of the batter and spread it around evenly. Cook for a moment. Repeat for all the batter.
7. Boil some water. Cook the curly red chili, red Thai chili, and garlic until soft. Add them into the blender along with water, peanut butter, palm sugar, and salt. Blend until smooth.
8. Transfer the Sambal into a bowl, then add lime juice and sweet soy sauce. Stir.
9. Prepare the skin. Add the filling, then fold and roll.
10. Heat the oil. Fry the Rissoles until golden brown. Set aside.
11. Traditional Rissoles are ready to serve.
