🍋 Ingredients 🍋
Pistachio shortbread base
Butter 75g
Sugar 30g
Salt 4g
Ground pistachio 40g
Cake flour 70g
150℃, 45 min
Lemon rare cheesecake
Cream cheese 75g
Sugar 30g
Lemon juice 20ml
Lemon zest
Sheet gelatin 3g soaked in 10g water, melted in microwave
Whipping cream 75g
Gin
Lemon slices
Plum wine jelly
Sheet gelatin 5g soaked in 50ml water, melted in microwave
Plum wine 150g

You used some kind of tea for the gelatin, right?

I stuck a few green tea leaves in the jelly to decorate. Good spotting! For the jelly itself I used just plum wine, bit of water and gelatin.
